Mexican Crock Pot Stuffed Peppers

These are great topped with a little sour cream or guacamole!

  • 1 cup Mexican blend shredded cheese
  • 1 pound ground beef
  • 1 pound ground sausage
  • 1 box of Spanish Rice
  • 1 jar of Salsa
  • 1 can corn
  • 1 can black beans
  • 2 tablespoons taco seasoning
  • 6 bell peppers


  • Wash the peppers and cut off the tops
  • Remove the membranes and dice up the tops
  • In a separate bowl mix all the ingredients except half the salsa and half the shredded cheese
  • Fill each pepper with the meat mix
  • Place the peppers in a greased or foil-lined crockpot OR use a crockpot liner
  • Top with the remaining salsa
  • Cover and cook for 6 to 8 hours
  • minutes before serving top with the remaining cheese, cover and allow to melt
