Mexican Crock Pot Stuffed Peppers
These are great topped with a little sour cream or guacamole!

- 1 cup Mexican blend shredded cheese
- 1 pound ground beef
- 1 pound ground sausage
- 1 box of Spanish Rice
- 1 jar of Salsa
- 1 can corn
- 1 can black beans
- 2 tablespoons taco seasoning
- 6 bell peppers
Wash the peppers and cut off the tops
Remove the membranes and dice up the tops
In a separate bowl mix all the ingredients except half the salsa and half the shredded cheese
Fill each pepper with the meat mix
Place the peppers in a greased or foil-lined crockpot OR use a crockpot liner
Top with the remaining salsa
Cover and cook for 6 to 8 hours
minutes before serving top with the remaining cheese, cover and allow to melt
