These crock pot stuffed peppers are delish! And there is NO precooking. Everything cooks right inside the pepper....all you do is a wash, chop, mix and stuff.
All you have to do is a wash, chop, mix and stuff. Then let the crock pot do the cooking for you.
Prep time is about 8 minutes and cook time is between 6 and 8 hours. Then about 20 minutes before dinner time just top with your shredded cheeses, cover it back up and give it a few minutes to melt.
This batch was made with Mexican flavors so it's a slight twist on the classic dish. But it's still amazingly yummy and oh so easy to make.

Slow Cooker Stuffed Peppers Step-by-Step
Ingredients
We used ground beef and ground sausage with this recipe. You don't have to. You can use either/or.
Also...if you like it super spicy you can use ground sausage. If you go that route just make sure you get some sort where the spices complement the Mexican seasonings...
- 1 cup Queso or Mexican blend shredded cheese
- 1 pound ground beef
- 1 pound ground sausage
- 1 box Spanish Rice
- 1 jar of Salsa
- 1 can corn, undrained
- 1 can black beans, undrained
- 1 package or taco seasoning OR use our homemade version (see below)
- 6 bell peppers
Homemade Taco Seasoning
If you'd rather bypass the taco seasoning mix, no worries! Here's a homemade version.
This recipe equals one packet. You can double it or triple it. You can honestly make as much as you want. It last mixed up just as long as any other seasoning.
Just keep it in a sealed canister and use it within 6 months or so...
- 3 teaspoons chili powder
- 1 1/2 teaspoons paprika
- 1 teaspoons onion powder
- 1/2 teaspoons sea or Himalayan salt
- 1 teaspoon garlic powder
- 1/8 teaspoon red pepper
Directions
#1 Wash and cut the tops off your bell peppers...
#2 Mix all the ingredients except half the salsa and the cheese...
Scoop, stuff, pop them in the crockpot & top with the remaining salsa...
Cover and cook on low for 6 to 8 hours...
20 minutes before supper time top with the remaining cheese, cover and allow the cheeses to melt!

Ingredients
- 3 teaspoons chili powder
- 1 1/2 teaspoons paprika
- 1 teaspoons onion powder
- 1/2 teaspoons sea or Himalayan salt

- 1/8 teaspoon red pepper
Instructions
- Mix all the ingredients well
- Use immediately or store in a sealed canister for 3 to 6 months

Mexican Crock Pot Stuffed Peppers
Ingredients
- 1 cup Mexican blend shredded cheese
- 1 pound ground beef
- 1 pound ground sausage
- 1 box of Spanish Rice
- 1 jar of Salsa
- 1 can corn
- 1 can black beans
- 2 tablespoons taco seasoning
- 6 bell peppers
Instructions
- Wash the peppers and cut off the tops
- Remove the membranes and dice up the tops
- In a separate bowl mix all the ingredients except half the salsa and half the shredded cheese
- Fill each pepper with the meat mix
- Place the peppers in a greased or foil-lined crockpot OR use a crockpot liner
- Top with the remaining salsa
- Cover and cook for 6 to 8 hours
- minutes before serving top with the remaining cheese, cover and allow to melt
