Super Easy & Super Cheesy
This easy scalloped potato recipe is absolutely yummy! AND it's super easy too. You simply cut everything up, mix & toss it in, cover and cook.
It makes a delicious side OR you can add a couple cups of any sort of precooked meat. Then you have a one-pot dinner ready and waiting when you walk in the door 🙂
The Ingredients Are Probably Already in Your Kitchen...
One of the great things about this recipe is I almost always have all the ingredients on hand. That makes it not only super practical but an anchor for days I just don't want to cook. Here's a list so you can check your own pantry:
Easy Scalloped Potato Recipe Ingredients:
- 6 cups potatoes, washed and sliced
- 1 medium onion, diced small (optional)
- 1/2 cup butter, melted
- 1 can cream of mushroom
- 2 cups shredded cheddar
- 2 cups Velveeta, diced small
And on days I REALLY don't want to cook...
Everyone has these days. You just don't want to cook or you simply run out of time. Here's a super easy answer. Just toss in a couple cups of any sort of meat that's pre-cooked. It can be frozen, canned or freshly cooked, it doesn't matter. You get a super yummy one-pot meal that everyone is gonna love 🙂

Easy Scalloped Potato Recipe
Ingredients
- 6 cups potatoes washed and sliced
- 1 medium onion diced small (optional)
- 1/2 cup butter melted
- 1 can cream of mushroom
- 2 cups shredded cheddar
- 2 cups Velveeta diced small
Instructions
- Spray, butter or oil the slow cooker insert.
- Wash potatoes, remove bad spots and slice 1/4 inch quick. Set aside.
- Mix melted butter, soup and cheeses in crockpot. Stir well.
- Add onions and stir in.
- Pour in potatoes and stir til potatoes are well coated.
- Cover and cook on low for 5 to 7 hours, or til potatoes are tender.
Notes
- Add a diced onion (caramelize it first for an amazing taste)
- Add a couple teaspoons of minced garlic either with the onion or on its own
- Add a couple cups of any sort of precooked meat you have on hand. It makes a yummy one pot meal
