Breakfast meals are a staple around here. Hubby likes breakfast for breakfast...and lunch...and supper too. But as much as we love breakfast dishes I don't always want to make them when I've got one eye open and am barely moving. That's where this ham & cheese breakfast casserole comes in handy. Not only is it quick and easy...this baby cooks overnight and is ready when you wake up OR when you get home from work. A major score all around.
This particular casserole is made with ham BUT you can make it with any precooked meat you have on hand. You can actually leave the meat out too if that's a preference. Canned meats will work too but generally aren't as tasty...but they sure work in a pinch :)

Gather Your Ingredients...
Mix Eggs, Milk & Spices...
Beat 'til Lemony Yellow...
Layer Your Ingredients...
Layer Like This:
- 1/3 Hash Browns
- 1/3 Meat
- 1/3 Veggies
- 1/3 Egg Mixture
- 1/3 Cheese
Do it 2 more times & the last time top with the last of the cheese.
Cover & Cook on Low 5 to 7 hours...

Ham & Cheese Breakfast Casserole
Ingredients
- 12 eggs
- 1 ¼ cup cream or milk or half and half
- 20- ounce bag of frozen hash browns
- 2 cups of diced ham bacon or sausage
- 1 1/3 cups of shredded cheese
- 4 cloves garlic, chopped (optional)
- 1 teaspoon creole seasoning (optional)
- ¾ cup mushrooms (optional)
- ¾ cup onions (optional)
Instructions
- Spray, oil or butter you slow cooker insert.
- In a separate bowl beat the eggs, milk and spices til lemony yellow.
- Layer your ingredients as follows:- 1/3 Hash Browns- 1/3 Meat
- 1/3 Veggies
- 1/3 Egg Mixture
- 1/3 Cheese - Repeat the above step 2 more times, then top with the remaining cheese.
- Cover and cook on low for 5 to 7 hours.
