Here's a twist on the classic crock pot beef vegetable soup! We decided to toss in some bacon and kielbasa chunks to add some amazingly delicious flavors :)

There's nothing quite as delicious as soups and stews in the winter. Sure, soups a great staple any time of the year.

BUT when it's just plain nasty outside...like it's been for a couple weeks here...you appreciate a bowl of warm, delicious soup coming out of the crockpot in the evenings. And btw, this one's kiddo approved too!

I don't know if it's the same around your house or not. But it works well here. So 'til it warms up a bit, soups on the menu :)

Low Carb & Keto Adjustments

Going low carb doesn't mean you can 't have the deliciousness of crock pot beef vegetable soup. OR that you have to give up the convenience of your slow cooker either. It can actually be your best friend when it comes to sticking with your diet.

But how? It's got potatoes, right? Substitute. Just sub in cauliflower OR white sweet potatoes OR heck, regular sweet potatoes... for the regular potatoes. You'll get the same basic flavor and save on your carbs too.

Low Glycemic & Diabetic Adjustments

Low-scale glycemic eaters, same goes for you guys as for the low carbers. I am not diabetic thankfully, but my mother-in-law is. As is my step-father. So I am trying to lower the glycemic index in our meals. And regular sweet potatoes work well for that. BUT I run into an issue.

My hubby doesn't care for sweet potatoes too much. He'll eat them, but he doesn't enjoy them. And honestly...there's too much to life that's a chore. Food shouldn't be one of them, I don't think.

So I found white sweet potatoes. It was by accident really. I was shopping for herb plants last Spring and found them. They came from Bob's Market & Greenhouse. They are in OH and WV. But I'm pretty sure I saw some at Krogers a few weeks ago too! So maybe they are becoming more "the thing".

So anyway, I figured why not try them. Right? So I peeled, sliced and fried them in half coconut oil and half butter...yeah, we're doing the low carb thing...it a semi-sorta sort of way. And then I added a LOT of garlic powder and Himalayan salt. This is a recipe from my daughter, they are Paleo. So I guess this recipe works for Paleo too!

Now back to the results...Guess what? Hubby ate them. And he had NO idea he was eating sweet potatoes! So there's an EPIC SCORE :) And NOW they are being added to our soups and stews instead of Russet. I love loves me some crock pot soups in the Winter :)

Sorry for the side trip...but it was exciting for me. Foodie nerd that I am. That's alright, I'm cool with that. Now on to the recipe...

Crock Pot Kielbasa Bacon Beef Vegetable Soup

Here's a delicious twist on the traditional crock pot beef vegetable soup :) We've added bacon and kielbasa to jazz it up a bit.

Ingredients
  

  • 1-2 cups beef stock or broth
  • 1-2 cups vegetable or tomato juice
  • 1 14.5 ounces can tomato sauce
  • 5 small potatoes sized into chunks
  • 1 medium onion diced
  • 2 medium carrots peeled and sliced
  • 1 1/2 pounds beef stew meat
  • 12-16 ounces kielbasa sliced
  • 1 package bacon cooked and crumbled
  • 1 tablespoon minced garlic
  • 1-2 tablespoons Italian seasoning
  • 2 tablespoons Worcestershire sauce
  • Himalayan Salt to taste
  • Black Pepper to taste

Instructions
 

  • Lightly grease, oil or butter the slow cooker insert.
  • Place the vegetables in the bottom of the crock pot, top with the meats, and then sprinkle with the garlic and Italian seasonings.
  • Pour 1 cup each of the beef stock and vegetable/tomato juice over the top.
  • Cover and cook on low 8 hours; high 4 1/2 to 5 hours.
  • About 20 minutes before serving:
  • Stir the soup and add as much of the remaining beef stock and vegetable juice as you like to reach the consistency you prefer.
  • Add the Worcestershire sauce, salt, and pepper to taste.

Freezer Meal Prep:

  • Place add the ingredients in a large, labeled freezer bag. Lay flat and freeze up to 3 months.
  • Note: If you're low on freezer space you can opt to add the juices, tomatoes, and beef stock when cooking. If you go this route, I wouldn't freeze the potatoes. They don't seem to do as well if they aren't frozen with a lot of liquid.

Notes

Dietary Adjustments: Diabetic, low glycemic index eaters, low carb & keto eaters AND Paleo dieters can benefit by substituting purple, orange or white sweet potatoes for the Russet potatoes in this recipe. Cauliflower is also a viable option. I personally prefer white sweet potatoes, but it's your choice of course.
Serving Suggestions: Top with more bacon, diced parsley or sour cream to serve.

This is NOT a difficult recipe. And the blending of flavors tastes amazing when it's done! I've made it on the stove top a couple times, I prefer it in the slow cooker. NOT just cause this is a crockpot site. But because the flavors have time to "meld". And, it's even better warmed up the next day. So you might want to make a little extra or lunch (or a whole second meal)...whatever you prefer :)

My main recommendation from this cooking expedition? Don’t use a cheap beer. I personally wouldn’t use a really dark beer either. Unless you like the flavor of dark beers. I don’t so much. If you enjoy dark beef, if that’s the case, you’ll probably enjoy beef cheese soup made that way. Just FYI. Experiment a little and enjoy it 😊

Slow Cooker Beer Cheese Soup

This slow cooker beef cheese soup is nothing short of absolute creamy deliciousness! The recipe list is a little involved, but the amazing flavor you get when you’re done…epically WORTH 10 minutes prep!

Ingredients
  

  • 1/4 cup butter
  • 1 cup diced carrots
  • 1 cup diced onion
  • 1 cup diced celery
  • 2 cloves garlic minced
  • 12- ounce bottle of dark beer
  • 2 cups chicken broth 1 1/2 cups in step #1, 1/2 cup in #2
  • 1/4 cup flour
  • 3 cups milk/half & half/heavy cream
  • 4 cups shredded sharp Cheddar cheese
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dry mustard
  • 1 teaspoon hot pepper sauce
  • 1/8 teaspoon cayenne pepper

Instructions
 

Slow Cooker Method:

  • Use the butter to grease the crockpot & toss in the veggies. Pour the beer and 1 ½ cups of the broth over the top; cook 5 to 8 hours on low, 3 ½ to 4 hours on high.
  • 45 to 60 minutes before serving…Turn the crockpot to high. Mix the ½ cup broth with the flour and whisk until smooth.
  • Add the last seven ingredients and stir well.
  • Cover with the lid tilted and cook until the cheeses are melted completely (About 45 minutes).
  • Taste test. Add hot sauce, salt, and pepper to your own preference.

Stove Top Method

  • Combine the chicken stock, beer, and vegetables in a saucepan. Simmer until the vegetables are tender (Usually about 12 to 14 minutes).
  • While the veggies are cooking, use a large soup pot and melt the butter over medium-high heat.
  • Once the butter is melted, add the flour a little at a time while whisking.
  • Cook for 3 to 4 minutes until the mixture is a light brown.
  • Turn heat to medium and low add the milk. Whisk and stir constantly or the milk can scorch. Stir until thick (about 5 minutes).
  • Turn the heat to low and add vegetable-broth mixture and the remaining ingredients. Adjust hot sauce, salt, and pepper to your preference.

Freezer Meal Prep

  • Your needs will vary slightly depending on how you intend to cook this recipe (slow cooker or skillet). To err on the side of caution…so you can use it however you (or I) please…I prep mine like this.
  • Label the freezer bag. Make a note you’ll need a beer and 3 cups of milk, half & half or heavy cream when you make the recipe.
  • If your shredded cheese didn’t come in a 4-cup bag, dump 4 cups in a quart-sized freezer bag.
  • Toss the vegetables and broth in a gallon size freezer bag.
  • Place the spices in a sandwich or snack-sized freezer bag.
  • Stack up the bags and use freezer tape to attach them ~or~ toss the cheese and spice bags in the gallon bag.
  • Squeeze out excess air and freeze for up to 3 months.

This one’s delish! Turkey breasts are so prone to drying out. Not if you wrap it with bacon. And it isn’t difficult either. The first time I tried it, it took me about 15 minutes. After that first session, like 5. And so worth it too! ‘Cause the bacon will actually cook right up in the slow cooker. Pretty cool 😊...


5-Ingredient Slow Cooker Spiral Ham

Okay, or 6 ingredients. If you do the brown sugar, it’s six. But either way…you will LOVE this ham. It’s so very easy and everyone that’s ever tasted it LOVED it!

Pssttt…If you go this route for your Christmas ham, save that ham bone! Even if you have to freeze it. Don’t throw it away! Even if you’ve got tons of leftovers…just toss it in a freezer bag and make up this yummy Ham & Bean Soup later in the winter.


UGLY Crock Pot Turkey

This is the biggest one I've laughed at to date. At myself I mean. 'Cause did you know you can cook a turkey in a bag? Sure. Old news, right? But did you know you can cook like a 12-pound or less bird right in your oval crock pot? You bet you can!

BUT, be warned, it's ugly. It's juicy and tender and delicious. But again...it's ugly. So, it's perfect for taste and for slicing and pulling off the bone to put on a platter...but not so much if you're using it for the center display type thing...

Psst…If you decide to go this route, don’t forget to save the carcass and scraps to make turkey bone broth. You’re not spending any extra $ to make it and it is freaking AMAZING!


Honey Maple Crock Pot Ham

This one is a classic sort of ham. It's a pre-cooked option that we had years and years ago. It's got whole cloves stabbed throughout it. And the sweetness of honey, maple and a touch of apple. I’ve never had them burn either. Which I thought was really cool. Cause I forgot to turn that crock off and left it on overnight. There were a LOT of crockpots going at that event.

Easy, 5-Ingredient Crock Pot Chicken Adobo

This crock pot chicken adobo is SO deliciously easy! You can prep in less than 5 minutes. AND make it a freezer meal too!

Ingredients
  

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1 medium onion diced
  • 8 cloves garlic crushed
  • 1/2 cup vinegar
  • 3/4 cup soy sauce

Instructions
 

  • Combine the onion, garlic, vinegar and soy sauce in the bottom of the slow cooker insert.
  • Dice the chicken into 1 to 1 1/2 inch chunks and toss in the marinade.
  • Toss to coat.
  • Cover and cook on low for 5 to 6 hours.

For a Thicker Sauce (right in the crockpot):

  • 30 minute before serving turn the crock pot to high. Stir and tilt the lid to allow evaporation. The sauce will slightly thicken.

For a Quicker Thick Sauce:

  • Follow the directions above but ladle out at least half the liquid.
  • Heat over medium-high heat in a wide-bottomed saucepan or skillet. Bring to a boil then turn down to low. Stir every minute or two until the sauce thickens (about 10 minutes).

Freezer Meal Prep:

  • Prep the ingredients as directed and toss into a large freezer bag. Label and freeze for up to 6 weeks.

Other Versions for Chicken Adobo

As promised, you can make chicken adobo in the oven or in the skillet.

  • Nagi's version of chicken adobo is for skillet cooking. She calls her's Chicken Adobo Flavour Kapow. And with the sauce she's created I can totally see why :)

Her version is a lot like ours but adds a few more spices and cooks up on the stovetop. So when you're in a hurry, this is a great way to go.

  • Budget Bytes' version is a double method. It starts in the skillet and then goes under the broiler in your oven. They also use a completely different combination of sauces and spices. I think this version would be much sweeter. So if you like your chicken on the sweet side, this might be the version for you.

By using the stovetop-oven method, you'll get that crispy, slightly charred yumminess that only the broiler can accomplish.


OR if you'd rather make it in your crockpot but want a thicker sauce quickly, you can do a "quick reduction".

That sounds fancy and difficult. It isn't either. Nor does it take a long time. Only about 10 minutes. And if you're serving this yumminess over rice, you can prep the rice at the same time. OR you can also cook up some crockpot rice in a second slow cooker or have it frozen. Whatever works for you :)

Here's the reduction method. Just follow these simple steps.

  1. Cook your crock pot chicken adobo as directed in the printable recipe.
  2. Tip the crock slightly and ladle out at least half the sauce.
  3. Pour into a wide saucepan and bring to a boil over medium-high heat.
  4. Turn to low and stir every minutes or two until the sauce has thickened.

Step-by-Step Easy Crock Pot Freezer Meals

Supplies for Easy Crock Pot Freezer Meals

Today we're making 5 recipes with 8 servings each. And, of course, ya'll know that's an estimate. Like littles usually eat a lot less than growing teens. So we're estimating 40 meals.

So, if you're feeding 6 to 8 people, I'd use gallon freezer bags for this. If you're feeding 4 per meal. I'd use mostly quart sized freezer bags and double the amount you need.

  • Freezer Bags
    • 6 1-gallon zippable freezer bags (if you're cooking for 6 to 8 people)
    • ~OR~
    • 12 1-quart zippable freezer bags (if you're cooking for 4 people)
  • Sharpie Marker
  • Vegetable Peeler
  • Cutting Board
  • Excellent Knives for Slicing
  • Baggies Holders: Totally optional but SO helpful!
  • Printed Printable Grocery List (You can see and print that down below)

Step-by-Step Freezer Meal Prep Timetable

This timetable (just like the number of meals) is a time estimate. This is how long it took me.

This is the summary and you can scroll down to see the what/how/why for each thing...

  1. Pull out your bags and label them (me = 4 minutes)
  2. Set up your baggie holders and slip on the baggies in a row. Place printed recipe in front of appropriate baggies. (me = 4 minutes)
  3. Dice and slice the vegetables (me= 15 minutes)
  4. Dice up the meats (me = 10 minutes)
  5. Start a sink of hot soapy water (for step #7...I have terrible water pressure) and pour remaining ingredients into correct baggies (me = 5 minutes).
  6. Lay bags flat (one by one) and toss baggie holders in the wash water as they are removed. Squeeze out excess air and freeze in a stack (me = 4 minutes).
  7. Toss any extra packaging in the trash and compost the vegetable scraps. Wash the dishes...which is really just the knife, vegetable peeler and baggie holders for me. And lastly, wipe down the kitchen (me = 6 minutes).

Vegetable Prep Detail:

Carrots:

(me = 4 minutes)

One recipe calls for baby carrots and the other for whole carrots. It really doesn't matter which you use.

If you're opting for saving time, use baby carrots. And if you're worried about added chemicals, purchase organic baby carrots.

If you're wanting to save money and invest a little more time, go for whole carrots and then peel and slice them. I did half and half and followed my recipes. So, I did...baby carrots for the roast beef and regular carrots for the broccoli cheese soup.


Garlic:

(me = 3 minutes)

You can purchase (or grow) garlic bulbs. Or you can purchase the pre-minced stuff in a jar. Also, you can get the bags of fresh garlic cloves that are pre-shelled. Pre-shelled, hmmm. I'm not sure that's the right term or even if it IS a term...

I bought the stuff from the produce section that's fresh but ready to use. It's already "shelled" but in whole cloves. But you still have to dice up the cloves. So it still has a fresh flavor... but no peeling the cloves.


Peppers:

(me = 4 minutes)

No shortcut on this one for me. I just purchased fresh and sliced. You can purchase frozen if you want to save more time.


Onions:

(me = 4 minutes)

Same goes for the peppers. I did fresh, you can purchase frozen as a time-saver if you like.


Potatoes:

(me = 0 minutes)

 Me personally, I don't usually freeze my potatoes. Some folks do. I just don't like the texture. Every once in a while I'll give it a shot. They usually work okay in soups or with a sauce frozen around them.

I didn't in this batch of cooking. They'll get tossed in the day of cooking So that's added to the label in step #1 to "add # of diced/chunked/sliced potatoes. You can always freeze them if you want, or you can opt for frozen potatoes.

Meat Prep Detail:

We've got 3 types of meat we're prepping here. Kielbasa, a beef roast, and chicken breasts.

I am not telling you to wash the cutting board between each cut. And I am not telling you NOT to. I'm gonna say I clean the cutting board between each type of meat. I just think it's safer. So that added a little extra time. Only like 45 seconds. So worth it to me to not even chance food poisoning ;)


Kielbasa/Smoked Sausage:

(me = 3 minutes)

First of all on meat prep is the sausage. Or kielbasa. They are really one in the same. Just different spices are used in the making.

I don't slice the links at an angle. Nor, do I worry about slicing them super thin. I just open, slice and toss in the correct baggies.

If you get a good brand, they'll puff up and sorta "pop" when you cut or bite into them. I really don't have a good way to explain it. But if you look at the picture of our One-Pot Smoked Sausage Dinner, you'll get what I mean.

Or, you can also purchase the little smokies sausages that are in the original recipe. That would save more time and cut out the washing of the cutting board :) 


Beef Roasts:

(me = 3 minutes)

I needed to cut mine in half. Only because I'm making two freezer meals, not one. So I just opened the package and sliced it in two. Then the two pieces got tossed in the correct baggies. Lastly, I washed the cutting board again.


Chicken Breasts:

(me = 4 minutes)

Last thing on meat preps. And there's nothing complex about this one either. Just slice into strips and toss into the Chicken & Potatoes baggie(s). And, of course...wash and sanitize the cutting board.

Dairy Prep:

I don't think I'm gonna freeze dairy anymore. Well, I will change that to say I am being more selective about freezing dairy.

I've had several folks tell me evaporated milk separated on them. And a few tell me that their cream cheese wouldn't combine with the recipe very well.

While I've not had this problem myself, I've researched a bit and here's what I think...

  • Seems like (to me) that most types of milk will separate if they heat up too fast. Like from a cold pantry or freezer and you cook on high...or if your crockpot heats up really fast.
  • And some brands of cream cheese do not freeze well. Some do. But, I'm not plugging any brands, so I'll not name names.

So, all in all, I am thinking it'd be best to stir in all these in the last 20 to 30 minutes of your cooking time before serving. OR you can also freeze it separately. Like in its own bag. Check out this section in the broccoli cheese soup recipe to get what I mean...

Shredded cheese. It doesn't count, freeze way :)

Here's some deliciously easy comfort food. Crock pot chicken and potatoes. There's nothing complex about this recipe. It's a 1-2-3 sort of thing.

The most time-consuming part is chopping your veggies. And if you opt for using all fresh, it took me about 7 minutes to prep the whole thing from fresh.

I used all fresh veggies. And chopped up my own large chicken breasts. I did NOT make my own ranch seasoning. Nor did I make the cream of celery soup from scratch. This time anyway. I'm working that ;)

Handy Tips for Slow Cooker Cooking

When Fresh is Best

As I said a bit ago...the most time-consuming thing about this recipe is prepping the veggies. And fresh is better IF:

  1. You have time to deal with the vegetables and not let them go bad cause you're out of time (again). Been there, done it TOO many times to count. The best option here if you know yourself and are cool with your own limitations...grab the frozen options. It sometimes costs a few pennies more BUT you'll have the stuff frozen for when you have time.
  2. You can get decent quality vegetables. Boy, I've been some places it just isn't worth it. But that's seasonal lots of times too. So fresh is best yeah. But frozen or canned will sometimes work just as well. Your choice.
  3. You aren't doing freezer prep. BUT if you ARE wanting to do a freezer meal prep...then, I personally think you're better off opting for frozen potatoes.

Freezer Meal Prep for Potatoes

I'm going to be very honest. I have only had luck with freezing fresh potatoes a few times.

The only thing I can think of that I'd done differently for those to freezer meals was the potatoes were submerged in liquid. One time a broth. The other a creamed soup was surrounding most of them.

Yukon potatoes have been reported to freeze the best. The regular Russets and Reds, not so much.

Some folks will tell you they have great luck with freezing fresh potatoes. Me, I'm going to say try it once before you freeze ten pounds. You might not care for the texture.

That being said and IF you have time...you can always blanch the potatoes. Blanching is a GREAT way to use fresh vegetables in your freezer meal prepping.

  • Upside: You'll know exactly where your veggies are coming from. And you can cut back (or out) on preservatives.
  • Downside: Time. It takes time. And if you can find the time...especially during the growing season...you can put healthier foods in the freezer AND you can save money too.

I personally haven't gone this route historically. Not unless I am canning up a bunch. Some folks don't choose to can. Some don't freezer either. It's all up to you and your preferences.


Prepping Meals in a Hurry

Homemade canned potatoes work GREAT for potato soup recipes. Of course, you can always purchase canned potatoes OR use fresh as well. It's just an option out there if you want to try it.

Frozen potatoes are a good option if you intend to make a "dump and go" freezer meal. They have already been blanched...which is part of the pre-freezing, canning process. So they are ready to go.

Crock Pot Chicken and Potatoes

Want some deliciously easy comfort food? Here is our crock pot chicken and potatoes recipe. It's super easy. You can make it with fresh veggies or use frozen. It can also be converted into a freezer meal VERY easily.

Ingredients
  

  • 2 chicken breasts diced into large chunks
  • 4 medium potatoes washed and diced
  • 2 bell peppers sliced
  • 1 medium onion sliced thin
  • 1 15- ounce can cream of celery soup
  • 2/3 cup chicken broth
  • 1 packet dry ranch seasoning
  • Salt & Pepper to Taste

Instructions
 

  • Wash, peel, and prep the veggies as directed.
  • Spray, butter or oil the slow cooker insert. Then toss in the vegetables and then the chicken.
  • Mix the cream of celery soup, broth and ranch seasoning in a separate bowl, then pour over the top.
  • Cover and cook on low for 6 to 7 hours. Or on high for 4 to 4 1/2.

Freezer Meal Prep

  • Place prepared meat and vegetables in a pre-labeled gallon-sized freezer bag. (see note)
  • Mix the broth and soup and pour over the top.
  • Lay flat, squeeze out excess air and freeze flat.
  • Defrost in refrigerator overnight before cooking.

Notes

Freezing your potatoes is optional. I personally do not. Some people do and have great results. 
This recipe is one of the few I've seen it work out well with. Why? I think (and this is a guess) it's the surrounding liquids (the soup/broth) mixture poured over the top and surrounding the potatoes.
You have several options:
  • Freeze fresh potatoes and make sure the soup/broth mixture covers/surrounds them.
  • Wait until you put the meal in the crockpot and add the cut up potatoes then.
  • Use prepared, frozen potatoes (like hashbrowns)

Beef Burgundy is one of those delicious, winter stews that many people love. It's one of those perfectly delicious comfort foods. And this slow cooker beef burgundy is no exception.

We've had some requests lately for Instant Pot recipes. I don't own an Instant Pot. I DO have a Carey electric pressure cooker though. The ONLY difference is the Carey can be used for canning too! Cooking wise, there is no difference. So though this recipe doesn't say "Instant Pot", you can use the pressure cooker recipe for cooking in your Instant Pot if you'd like.

Another bonus, this recipe is another freezer meal! BUT that only works for the slow cooker. There are freezer meals for pressure cookers but this isn't one of them. I CAN be BUT you'll need to exclude the alcohol and go with beef broth for that to be okay. You can read more about that down in the printable pressure cooker recipe.

This slow cooker beef burgundy recipe takes a few shortcuts. It's far less time consuming than the traditional version. And it's perfect for when you're in the mood for a tasty, elegant meal and don't have a lot of time.

Ingredients
  

  • 1 pound sirloin tips
  • 2 tablespoons flour almond flour works well low carbers
  • 2 tablespoons butter melted
  • 1/2 teaspoon browning sauce
  • 1/2 cup Burgundy wine or Beef broth if you don't do liquor
  • 1 tablespoon minced garlic
  • 1/2 cup pearl onions or sliced onions
  • 1/2 cup skinned and diced carrots
  • 3/4 cup sliced mushrooms
  • 1 packet onion soup mix
  • Salt & Pepper to taste

Instructions
 

Slow Cooker Method:

  • Use about 1/2 the butter to grease the slow cooker insert.
  • Toss the beef tips in a zippable baggie with the remaining melted butter. Zip and shake.
  • Open the bag and sprinkle with the flour and onion soup mix. Shake until coated.
  • Toss the coated meat, garlic, onions, carrots and mushrooms in the slow cooker.
  • Mix the wine and browning sauce and pour over the top.
  • Cover and cook on low for 5 to 7 hours (possibly up to 9 depending on the size of beef tips and carrots).

Pressure Cooker Method (ie: Instant Pot)

  • Hit the "Saute" button on your pressure cooker. Proceed to the next step while it's heating up. It will need to get to "hot" before you use it.
  • Toss the beef tips in a zippable baggie. Sprinkle with 1 tablespoon of the melted butter, then sprinkle with the flour and soup mix. Zip and shake.
  • Place the remaining butter in the heated pressure cooker and lay the beef over the bottom in a single layer. Cook 3 to 5 minutes on each side. If there's an issue with sticking just add a little more butter or a bit of the wine/stock. Not much, just enough to keep it from sticking.
  • Remove the beef and set aside.
  • Add the wine and garlic to the pressure cooker. Scrape any butter brown bits off the sides and mix in well (flavor, flavor, flavor). Do NOT close the top. You have to reduce the wine and allow the liquor to evaporate. If you don't do this step then the steam that escapes can become flammable. No need to take that chance. Reduce for 5 to 8 minutes (or about to half the original amount).
  • Add the browning sauce and stir.
  • Toss the meat and vegetables back in the pressure cooker and add salt and pepper if desired.
  • Close the lid and press the "stew" button. Set for 40 minutes. Allow to sit for 8 to 12 minutes before venting.

Freezer Meal Prep:

  • NOTE: If you're making this for a freezer meal for your electric pressure cooker you will need to skip the wine. Use beef broth instead. The wine has to be reduced so the alcohol is removed before it can go in the pressure cooker. It's a fire hazard otherwise.
  • Prep the meat as directed above but leave it in the baggie.
  • Toss the veggies in the freezer bag.
  • Mix the liquid ingredients and pour over the top.
  • Lay flat, label and freeze for up to 3 months.
  • Defrost in the refrigerator overnight before cooking.
  • To cook cut the bottom out of the side of the bag and pour into crockpot so the meat is mostly on the bottom.
  • Cover and cook as directed above.

Notes

NOTE: If you're making this for a freezer meal for your electric pressure cooker you will need to skip the wine. Use beef broth instead. The wine has to be reduced so the alcohol is removed before it can go in the pressure cooker. It's a fire hazard otherwise.

Step by Step Beef Roast Prep

This isn't at all difficult. How could it be when it takes between 5 and 10 minutes eh?

Anyways...it isn't quite a "dump and go" meal BUT quick, easy AND it's super yummy.


Step #1: Beef Roast, Carrots & Potatoes

Step #1 Prep: Crock Pot Beef Roast, Carrots and Potatoes

Grease, oil or butter the crockpot insert. I personally prefer butter. Both for flavor and for the dietary path we choose to follow. But whatever you do, add a little something to help with cleanup afterward.

You're adding the roast, potatoes, and carrots first...

  1. The Roast: This beef roast was purchased already wrapped. Well, it came with the 1/4 beef I purchased wrapped like this. This is a great way to get a sliceable, tender roast beef. Instead of shredded like usually happens with our Shredded Roast Beef Sandwiches recipe.
  2. Wash and chunk the potatoes and carrots and toss them in. Around the edges and over the top if you have extras. I personally didn't peel my potatoes. But I DID peel my carrots. It's a taste preference. I don't like the way carrot skins cook. That's just me. Whatever you wanna do.

Low Carb/Keto folks...you can also have this yumminess! Substitute sweet potatoes for the Yukons and you're golden.

You can also wrap your own roast. I tried it once with butcher's twine. It was an epic fail and rather funny. But now I found a roll of meat netting! Excitement!!! I had no idea you could order it as a net. I guess I should have, but I never thought about it. It even comes in different sizes for different sized meats...



I have it on order now to try it out. I'm a foodie nerd and I know it. I'm okay with that :)

OHHHH. You can also make gravy with the broth when you're done. I didn't with this recipe, so you won't see any pictures of that part. BUT you can see directions in the printable recipe down below.


Step #2: Onions & Garlic

Step #2: Toss on Your Onions and Garlic

Toss the onions and garlic in next. You can slice or chunk the potatoes, whichever you want. AND you can also use as much or as little of the garlic cloves too.

So...you can see in the pic that I used a LOT. Why? Because garlic is healthy, helps fight colds and we like it. Use as much or as little as you prefer :)


Step #3: Broth & Seasonings

Step #3: Pour on the Broth & Sprinkle Your Seasonings

Your last step is adding the seasonings and the broth. You can make both from scratch OR you can purchase them. It all depends on how much time you want to spend and/or how close you want to eat to whole foods.

I personally try to balance it. We do NOT eat whole foods all the time. We do SOME of the time. When there is time and also when I'm in the mood.

For this recipe, I used homemade beef stock. Because I'd previously made a LOT of it and it was frozen. I did NOT make homemade Montreal Seasoning. You can if you choose.

So, if you DO decide to go homemade you can control:

  • The amount of salt added
  • Remove preservatives
  • Save quite a bit of $

And, if you decide NOT to go homemade, you can also purchase in bulk and save $ that way too :)



Step #4: Cut & Serve

Obviously, you'll need to cook it first :) But just covering it and cooking it on low for 6 to 8 hours. Or high for 4 to 5 hours if you'd rather.

Step #4: Crock Pot Roast Beef After Cooking.

It doesn't look like "so much awesomeness" right now...but WAIT! It will! And it's delicious too...

  1. Fish the roast out of the slow cooker and lay it on a platter, large plate or cutting board. Use a pair of scissors to cut the netting off and toss it.
  2. Next, use a very sharp, meat knife to slice your crock pot roast beef.
    • If you want it to have a "fall apart" texture, cut against the grain of the meat.
    • If you'd rather slice is super thin, cut with the meat grain.
  3. Lastly...dish it up and serve AND you can also make gravy with the juices. I didn't with this roast. I honestly ran out of time. But if you'd like to, the directions are in the printable recipe down below...

Easiest Crock Pot Roast Beef Ever

This recipe can easily be cut in half for smaller families OR made into a freezer meal. To make this into a freezer meal just hold off on adding the fresh vegetables. Make a note on the outside of your freezer bag you'll need them when you're ready to create this delicious crock pot roast beef one-pot dinner!

Ingredients
  

  • 3 pounds beef roast
  • 6 Yukon potatoes
  • 2 cups baby carrots
  • 1 onion
  • 12-30 garlic cloves
  • 2 to 3 tablespoons Montreal Steak Seasoning
  • 1/2 cup beef broth beef stock or water

Instructions
 

  • Lightly grease the slow cooker insert.
  • Place the roast in the bottom of the crockpot.
  • Wash the veggies and peel as desired. I left my potato skins on but not the carrots. It's a personal choice, you do as you prefer.
  • Cut the potatoes, onions, and carrots into fairly large chunks or slices and place in a slow cooker.
  • Pour the beef stock over the top and sprinkle with the seasonings.
  • Cover, and cook on low for 6 to 8 hours or High for 4 to 5 hours.

Freezer Meal Prep

  • Place the beef roast in a large zippable freezer bag.
  • Add your vegetables and sprinkle with the seasonings. (See notes here about potatoes)
  • Pour the broth over the top. 
  • Lay flat to freeze and defrost overnight before cooking

Notes

If your roast came wrapped, you'll need to remove that before slicing it.
Serve the roast sliced with onions on top with potatoes and carrots on the side.
Fresh parsley, thyme or minced chives makes a pretty and flavorful garnish for the top IF you're going for presentation.

Homemade Beef Gravy

Keto and Low Carb dieters...you can use this recipe too! You'll just need to substitute the flour with arrowroot powder. Arrowroot can be a little tricky to use so sprinkle just a little at a time over the butter and whisk well each time. It tastes exactly the same and saves TONS of carbs!

Ingredients
  

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup beef stock from slow cooker

Instructions
 

  • Melt the butter in a saucepan over medium heat.
  • Sprinkle the flour into the butter while stirring constantly.
  • Stir and mix the butter mixture constantly until it turns golden brown. About 4 minutes but will vary with the type and size of the pan used.
  • Slowly add the beef broth while you continue to stir.
  • Allow mixture to come to a low boil. Stirring constantly may not be necessary for a couple minutes but keep a close eye on it so it doesn't stick.
  • Turn heat to low and stir and whisks the mixture every couple minutes until it reaches the consistency you'd like.

Bacon Wrapped Turkey Breast

This bacon wrapped turkey breast has always been a favorite around here. And yes, the slow cooker crisps up that bacon!

And this recipe works great for feeding a smaller crowd. OR if you're planning on doing up both turkey and ham.

Does the bacon crisping always work? Nope. It depends on the bacon. So you'll need to get a really good quality of bacon. Not all fat, not all lean. Something in the happy middle.

I had a reader ask about turkey bacon. Sorry, turkey bacon will NOT work if you want this look. It's still yummy, but it won't look the same.


5-Ingredient Crock Pot Turkey

This 5-ingredient crock pot turkey is really yummy! Super delicious, tender and moist. BUT that's after it's cooked.

It's super ugly cooking. If you want to do a "full Thanksgiving presentation" sort of thing, I wouldn't make this.

If you want flavor, make this recipe though. The gravy was delicious but totally unnecessary. The meat was completely juicy without it.

This dishes main seasonings are honey and garlic. LOTS of garlic. Add using the slow cooker and some crock pot liners...you are ALL SET for the juiciest, most tender bird you've ever eaten!

PSSTT...It makes awesome leftover turkey sandwiches and freezes well too!


Easy Crockpot Turkey

Karen also has a really easy crockpot turkey recipe. You just need 3 ingredients to make the turkey itself. OR you can add just 3 more and make up an easy crockpot gravy to boot.

Very nice, very easy. And perfectly yummy too!


Slow Cooker Thanksgiving Ham Recipes

And now the ham. Not everyone eats ham. But those that do usually love to have it around for the holiday dinners.

Ham is very, VERY easy to do up in the crockpot. Do yourself a huge favor and use a crockpot liner like I talked about up with the turkeys. Cleanup is a breeze and it makes the ham moist and delicious.

5-Ingredient Spiral Ham

This is our favorite way for crockpot ham. We LOVE spiral ham. And making this 5-ingredient spiral ham is a breeze.

The pineapple juice adds your "wang", the garlic powder adds...well, garlic. And the Worcestershire melds it all together.

AND don't forget to save the ham bone! You can make this YUMMY crockpot ham and white bean soup very easily from the leftovers.

If you'd rather purchase a pre-cooked, slicing ham and just dress up the flavor...this one's a great option.

This one is another staple around here. It saves lots of oven space. Don't get me wrong here. I use a LOT of slow cookers over the holidays.

There's nothing super complicated about this recipe. It's pretty much the classic green bean casserole made in the slow cooker.

Some folks call this dressing. Some call it stuffing. Others say its the same thing but only stuffing if you put it in the bird.

I've always been confused by the terminology. BUT no confusion about the taste!

For simplicity purposes this recipe is semi-homemade. We use the boxed stuffing mix then add Hawaiian bread cubes and veggies.

Don't worry, it's all pointed at myself! Let me explain it's a pretty short story BUT completely funny.

Before we go any farther, let's get the legal stuff out of the way…this post may contain affiliate links. This means I get a small commission if you purchase through these links. Prepping Crock Pot Turkey

So...like I said before...I got a request. A reader wanted to know if you could cook a whole turkey in the crockpot. And I'd already done a bacon-wrapped turkey breast and it worked.

I figured it if fit, it would cook. And it DOES work...BUT it's UGLY! Oh my gosh is it UGLY!steps to make whole turkey in the crock pot

Again, I'm not sure what I was thinking. Well, sorta I do. I was thinking about taste, not looks.

Now the taste. Well, THAT is exceptional. Moist AND juicy. So much, in fact, there was NO need for gravy. We had it but it sure wasn't necessary.

Lots of garlic, a sprinkle of smoked paprika and about 1/2 cup of honey AND for this recipe, you need crockpot liners too.

The slits into the skin and the liners are what makes it ugly. BUT they are also why it's so flavorful.

AND if you're going to shred the meat it won't matter. If you're going to do the full spread, turkey presentation on the table DON'T use this method. Please. Or if you do, be it know...I tried to warn you :)


Why Didn't I Do Up a New Recipe?

I was in tears when I made this. Partially because I couldn't believe I'd been so goofy. Partially because I was upset I wouldn't have to make it again before I had to drive 300 miles. AND partially because I was laughing at myself.

I decided to focus on laughing at myself and wanted to share the snicker.

AND It freezes VERY well too! It wasn't quite as juicy after defrosting the cooked meat but it was still moister than the average oven turkey.

So that's why I decided not to redo the recipe. I wanted to FOCUS ON THE TASTE and FOCUS ON THE SNICKER.

5-Ingredient Crock Pot Turkey Pot Roast

All the seasoning amounts are ESTIMATES and what WE prefer. Adjust up and down to your own preferences.

Ingredients
  

  • 8 pound turkey some slow cookers can hold up to a 12-pound bird, but it's tight
  • 1 teaspoon smoked paprika per every 3 pounds
  • 1/3 teaspoon Himalayan salt per every 3 pounds
  • 1 tablespoon honey per 2 pounds bird
  • 4 cloves of garlic per pound

Instant Pot

  • 2 cups chicken broth

Instructions
 

Slow Cooker

  • Completely defrost your turkey according to the package directions
  • Peel the garlic cloves OR purchase the pre-peeled ones from the produce section OR use pickled garlic (all work). Score the garlic slightly if desired and set aside.
  • Mix the paprika and salt, also set aside.
  • Place deep slits into the turkey on all sides.
  • Place the turkey into the crockpot liner and stuff all the slits in one side with garlic, then the seasoning mix, then lastly, the honey.
  • Carefully flip the turkey in the bag and repeat on the other side.
  • Sprinkle any remaining seasonings and honey (or more if you'd like) over the top of the turkey.
  • Close the liner bag according to directions on the bag's package.
  • Cook on low 6 to 8 hours. Time will vary depending on how hot your crockpot cooks AND on the size of your turkey. This turkey weighed a little over 9 pounds and it cooked for about 7 hours.

Instant Pot

  • Follow the directions for the slow cooker recipe (excluding the use of the bag; don't use a bag of any sort in the instant pot).
  • Add 1 cup of chicken broth to the 6-quart instant pot. Or 1 1/2 to 2 cups to the 8-quart.
  • Close the instant pot lid. Set to manual high with the valve closed.
  • Cook 5 minutes per pound of turkey. Allow the instant pot to naturally release.

Oven-Baked

  • Preheat the oven to 325 degrees.
  • Follow the slow cooker directions for seasoning the turkey.
  • Place in a baking bag and cook for 13 minutes per pound of bird.
  • Remove from the oven and allow to rest for 30 minutes before carving.

Freezer

  • Most turkeys come frozen. You can prepare the seasoning ingredients and tape them to the frozen turkey if you wish. The seasoning packet will keep as long as the frozen turkey.
  • To freeze after cooking, allow the turkey to cool completely. Separate into portion-sized freezer bags and freeze up to 6 weeks.

Notes

Use a meat thermometer to check the internal temperature of the turkey. It needs to reach an internal temperature of 165 degrees before it is considered to be safe.
You'll need an oval-shaped slow cooker for this recipe. You'll also need a crockpot liner. Save the bones and broth and try your hand at making crockpot turkey broth.

5-Ingredient Honey Maple Apple Cider Slow Cooker Ham

This particular slow cooker ham was made a couple years ago. Well, several actually. Thus the really, REALLY old crockpot you see in the background. I really liked that slow cooker. It was really neat. No reason to babble on about it though, they quit making it. Oh, the odd nostalgia of a slow cooker foodie person. Weird? Yes. But I'm old enough to be totally okay with that.

AND...very sadly...there was a computer crash. MINE! And at the time, I wasn't smart enough to have more than one backup. And then the backup failed. SO, I had thought multiple recipes and LOTS of pictures had been lost.
Thankfully, that wasn't the case. There was a second backup I had forgotten about on my husband's computer! I couldn't have been more thankful. It wasn't ALL the stuff off the old computer by any means, but there were several.

Now...not all the pics are that attractive. I was NOT good at picture taking back then. Heck...I'm still not that great. BUT I'm learning now! So hopefully, they've improved over the years and you can at least tell what you're looking at.

5-Ingredient Honey Maple Apple Cider Slow Cooker Ham

Psst. It's best to NOT take the lid off once it's cooking. The more the lid comes off, the more the meat that doesn't go below the surface will dry out. Leave the lid alone will help retain the moisture in the slow cooker and the juiciness of the slow cooker ham.

Ingredients
  

  • 1 3 to 5- pound ham boneless or bone-in, it doesn't matter
  • 1 cup of good quality apple cider
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 40-50 whole cloves totally optional, but adds good flavor and looks festive

Instructions
 

  • Very lightly butter or oil the crockpot insert.
  • Poke cloves every 1/2 to 3/4 inches over the top and sides of the ham.
  • Pour the apple cider over the top of the ham, then drizzle with the honey and syrup.
  • Cover and cook on low for 5 to 8 hours. Depending on the size of the ham.

BBQ Slow Cooker Sauerkraut & Sausage

This slow cooker sauerkraut sausage dish has all the deliciousness of the classic kraut and sausage...BUT it's bumped up a notch with the yumminess of barbecue! AND with only 5 ingredients, you can't beat it.

Oh! AND there's an oven version too! It's not been made in a skillet around here yet. So I can't recommend that method yet. BUT the oven method melds the flavors pretty well. The slow cooker method does better BUT one doesn't always remember (if "one" is me anyway).

NOW...the pic above shows carrots too. That actually makes six ingredients. BUT those are necessary. I didn't think they added enough extra taste to warrant them as an ingredient.

You CAN add them if you want to of course, but they don't add any additional flavor really. Vitamin content, sure. Taste, no.

Slow Cooker Sauerkraut Sausage Ingredient Options

I didn't happen to have any barbecue sauce on hand when I was asked to make this recipe. I know! ME. Insanity. So, instead of tossing in a cup or two of bottled barbecue sauce I used tomato juice and brown sugar.

You can use bottled barbecue sauce with just about the same results. Either one is really good!

Also, another quick note on the tomato juice and sugar...you can use the minimum quantity recommended IF you want it less soupy. BUT it will cook much faster and possibly burn if you aren't around to watch it a bit. Just FYI there.

BBQ Slow Cooker Sauerkraut Sausage

This slow cooker sauerkraut & sausage dish bumps up the traditional dish with a dash of barbecue flavors. YUM!

Servings 4 to 5 servings

Ingredients
  

  • 1 14- ounce package Little Smokies or other sausages cut into links
  • 1 1/2 pounds sauerkraut
  • 1 medium onion chopped
  • 1 to 1 1/2 cups tomato or vegetable juice
  • 1/4 to 1/2 cup brown sugar
  • 1/2 cup shredded carrots optional

Instructions
 

  • Lightly oil, butter or spray the slow cooker insert.
  • Toss the sausages in the bottom of the crockpot.
  • Sprinkle the diced onions over the top.
  • Layer in the sauerkraut.
  • Mix the juice and brown sugar, stir until well combined; pour over the sausages and sauerkraut.
  • Cover and cook on low for 4 to 5 hours. At least 3 on high. Check onions for doneness.
  • Stir well before serving.

Oven Method:

  • Follow the same steps as above but increase the juice to 2 cups.
  • Bake in a preheated 350-degree oven for about 60 minutes.

Freezer Meal Prep

  • Pour all ingredients into a large, pre-labeled freezer bag. Please see notes about sauerkraut.
  • Lay flat, squeeze out excess air and freeze.
  • Defrost in the refrigerator overnight before cooking.

Notes

Freezing your sauerkraut is up to you. Honestly, I think it depends on the kind of 'kraut you're using.
If you get the pre-canned stuff off the shelf, freeze away. Or just wait and add it on cooking day (just make a note on the bag). For this option, just weigh out the difference between making sure you remember to add the 'kraut the day of cooking vs the amount of freezer space you have available.
If you purchase the refrigerated kind and IF it is fermented instead of canned AND if you want the natural probiotics in the sauerkraut to remain active...well, don't freeze it. Make a note on the freezer meal and add it the day you cook.
