Saturday evenings are usually our "relax night".  We generally try to eat early 'cause it's also our "splurge day" and it's not too smart to go to sleep with a full belly.  When time allows, I try to be nice and ask what hubby would like too.   What's my answer "dip".  Nothing else.  So this Parmesan Garlic Spinach Dip was born...

3 Dips in a Triple Crockpot in 10 minutes

I didn't think about it.  I just stuck my head in the refrigerator and started pulling out ingredients.  We already had veggies cut up and ready and half a loaf of Hawaiian Bread left...so here's the results:

  • Slow Cooker 3-Ingredient Queso Dip
  • Crock Pot Hot Artichoke Dip

Yep, I got a little hyper with it.  Yes, they were all hits (or I wouldn't have posted them for you guys to see).  Yes, we had lots of leftovers.

That was okay.  I made ham & provolone paninis and used the spinach dip as a spread.  We had crockpot tacos and used the rest of the queso dip over the top.  I honestly don't remember what we did with the artichoke dip, but we ate it so no waste.

This one was excellent as a dip but slightly epic on a panini

Ingredients for Parmesan Garlic Spinach Dip
Parmesan Garlic Spinach Dip
  • 16 ounces chopped, frozen spinach
  • 1 to 1 1/2 cups diced onions
  • 1 1/2 cups Parmesan cheese
  • 1 block cream cheese
  • 2 tablespoons Worcestershire sauce
  • 1 cup heavy whipping cream
  • 2 teaspoons minced garlic

Simply combine all your ingredients, cover and cook on low for 4 to 6 hours.  When your onions are tender your dip is done.

Pssttt...It's even better the next day, so you can make it ahead if you'd like too!

Just 5 Minutes & 7 Ingredients For This Quick & Easy Dinner

If you're looking for quick, easy AND tasty...look no further!  This bacon potato casserole completely wins both!

The only issue you might have is being able to have pre-cooked bacon on hand.  At this house, that gets eaten.  If we don't have BLTs for lunch or eat if with a breakfast meal...someone just has it for a snack.  Then when I need it, it's gone.

But I found a solution!  Freeze it!  Not only do I freeze it, I hide it too.

You can pre-cook it in a number of ways.  Any way you prefer honestly.  Pan frying is, of course, an option, but you can also bake it.

How to Bake Bacon

Just put it on a foil-lined pan and bake it in a preheated oven at 450 degrees for about 15 minutes.  Then allow it to drain and cool, pop it in a freezer bag and hide it in the freezer.

I usually bake 2-3 packages at a time.  We'll have one over the course of several meals and I freeze the rest.  Then I've got "baking bacon" pre-cooked and frozen (and hidden) when I need it.  And it's the only pre-cooked anything for this recipe.  Enjoy!

Boy oh boy...do I have a recipe for you!  Bacon & ranch would make it worth making but adding in chicken & bacon...well you've got one heck of a chicken bacon ranch casserole on your hands :)  If you can find 10 minutes in the morning before you go to work OR 10 minutes the previous night, you are golden.

The only prep work before tossing everything in the crockpot is precooking the pasta a bit.  You CAN skip this part but I personally don't like the taste.  I'm in search of a type/brand of pasta that can handle this cooking method.  IF I find it, you guys will be the first to know.

Also, I used precooked chicken overnight.  Again, super easy and less than 5 minutes to toss together.  That recipe can be found here.

I'll not hold off any longer...this recipe is amazing.  It got rave reviews all the way around too.  Let us know if you like it.

Cheesy Chicken Bacon Ranch Casserole

Gather your ingredients:
  • Pasta -I used Italian Trottole...it has a really cool shape
  • Precooked Chicken - You can purchase rotisserie chicken OR you can make your own precooked (freezer) chicken
  • Precooked bacon or bacon bits
  • 1 stick of butter (not margarine)
  • Shredded cheeses of your choice
  • Eggs
  • Sour cream
  • Cream cheese
  • Milk
  • Ranch dressing mix
  • Salt and pepper

     

Toss everything in the slow cooker:

  • You can or you don't have to precook the pasta.  Only partially if you do it...I prefer this taste to tossing it in straight out of the package.  Some brands seem to do better than others and some shapes as well.  This is the version I used.  I've not tried using it in any slow cooker recipes without boiling it a bit first.  I do know it's possible, I just haven't yet.  It's also a very cool shape and has a great texture.  I boiled it about 6 minutes...

  • You can also use bacon OR bacon bits...it completely depends on your preferences AND the amount of time you have to deal with it.  I was running short on time so I used these bacon bits that are nitrates.

  • 3 cups pasta
  • 1 1/2 pounds precooked chicken

  • 1 stick butter not margarine
  • 3 1/2 cups shredded cheese divided
  • 4 eggs

  • 1 packet ranch dressing mix

Instructions
 

  • Butter or spray the slow cooker insert.
  • Toss everything in the crockpot except the reserved 1/2 cup of shredded cheeses.
  • Stir it up well, cover and cook on low for up to six hours. It'll be done around 5 but the extra hour doesn't hurt anything. If you need it to make it a bit longer just add a little extra liquid.
  • Add the last of the cheese, cover and allow to rest 15 to 20 minutes before serving.

Chicken Bacon Ranch Pasta

1 tablespoon olive oil 1 onion, chopped
5 slices pancetta bacon, raw
1 (9 ounce) package cheese-filled tortellini
2 tablespoons balsamic vinegar 2 tablespoons grated Parmesan cheese
Heat oil in a large skillet over medium heat. Saute onion and bacon until onion is translucent and bacon is brown; remove from skillet and drain on paper towelling.
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
Return onion/bacon mixture to skillet and add cooked tortellini. Toss with 2 tablespoons olive oil and heat through. Place in serving dish or bowl, sprinkle with vinegar and cheese and serve immediately.

1 medium onion, chopped 2 tablespoons butter
3 skinned and boned chicken breast halves, cut into 2-inch pieces
salt and pepper
1 tablespoon dried or fresh tarragon or thyme (optional) flour for dredging
2 1I2 cups Newman's Own All- Natural Alfredo Sauce
10 ounces cheese tortellini, prepared according to package directions
chopped parsley for garnish
Saute onion in butter until limp and set aside.
Season chicken with salt and pepper to taste. Add tarragon or thyme, if desired. Dredge in flour and saute in pan used to saute onion for about 5 to 7 minutes.
Add onions, Alfredo sauce, and tortellini. Stir together, heating thoroughly for 5 to 10 minutes. Garnish with parsley and diced peppers as desired.

Chicken Tortellini Soup

7 3/4 cups chicken broth
1 (14.5 ounce) can stewed tomatoes, cut up
1 (10 ounce) package frozen chopped spinach, thawed
1/4 cup grated Parmesan cheese 1/2 teaspoon salt
1/4 teaspoon pepper
1 (9 ounce) package refrigerated cheese tortellini
2 1/2 cups cubed cooked chicken
In a Dutch oven or soup kettle, combine the broth, tomatoes, spinach, Parmesan cheese, salt and pepper. Cook for 10 minutes; add the tortellini and chicken. Cook for 5 minutes or until tortellini is heated through.

Stuffed Mushrooms are one of our favorite appetizers.  We actually like them so much they wind up being a side dish on occasion.  There are all sorts of flavorings you can add BUT these Bacon-Ranch Crockpot Stuffed Mushrooms are absolutely the bomb!


Bacon Ranch Stuffed Mushrooms

They are NOT hard to make either.  Actually if you leave the cream cheese out for several hours and let it soften completely, then toss it all in a food processor or Vitamix blender...it takes like 10 minutes to prep them.  They are unbelievably yummy!

I'm not saying they are any sort of copy cat recipe.  My favorite "out to eat" mushrooms are from Red Lobster BUT they are super expensive and you get like 7.  They are also swimming in butter.  I like butter, maybe too much honestly BUT it really isn't something we choose to eat all the time.  It's an option to add a couple tablespoons to the recipe in little pats over the top.  It is very tasty but it isn't necessary, they'll cook up fine without it.


Ingredients for Crock Pot Stuffed Mushrooms with Bacon & Ranch

Crockpot Stuffed Mushrooms

You'll Need:

  • 20-25 large, fresh mushrooms
  • 2 packets of bacon, cooked and crumbled ~or~ 2 packets of real bacon bits
  • 1 1/2-2 blocks of cream cheese, softened
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons Ranch Dressing mix
  • 2-3 tablespoons of butter ~or~ Worcestershire sauce

Now for the Prep...

Wash the mushrooms and pat them dry, pop off the stems and dice them up.  You can do this with a knife and a cutting board or a food processor.  My favorite new toy is my Vitamix blender.  I can't WAIT to try making these in it!  That post to follow soon :)

Bacon Ranch Mushrooms

Now that the stems are diced up just toss everything (except the butter or the extra Worcestershire sauce...that goes on top) together and mix very well.

Use a melon ball scoop or teaspoon and mound the cream cheese mixture into the caps...Slow Cooker Stuffed Mushrooms

Now place them "tee pee" style in the crockpot.  This recipe is from a chipped beef recipe but I wanted you to be able to see what my brain meant by "tee pee" :)

Drizzle a couple tablespoons more of Worcestershire sauce over the top then cover and cook on low for 4-5 hours ~or~ 2-2 1/2 on high.

Serve that deliciousness as an appetizer or as a side dish folks will rave about and beg you to make more.  Psst...they are even BETTER the next day.  Just pop them in the oven/toaster oven/convection oven for 5 to 7 minutes to warm them up.  The microwave works in a pinch but the texture can get gross sometimes.

Ingredients

Yummy Mexican Dump & Go Crock Pot Recipe!

This is a really good dump and go recipe.   The beauty of this one is you can prep your veggies several days before hand...whenever you've time!  Then, the morning you're interested in having slow cooker fajitas for supper just grab those veggies from the refrigerator, the meat from the freezer and the spices from the cabinet...Toss, mix, cover and cook!  Couldn't be simpler really.

If you need to save even more time you can usually find fresh veggies pre-cut in the produce section and you can purchase pre-made fajita seasoning.  McCormick's brand is really good.


IF you'd rather save a bit more money or do organic then just chop your veggies over the weekend.  Crockpot FajitasYou can make your own seasoning as well if you'd like.  I honestly forgot to write down my recipe for the fajita seasoning BUT it's pretty close to this one except I don't use brown sugar.  I prefer my fajitas not be sweet at all.  So I didn't use brown sugar and double or triple the cumin.  That's a total preference thing.  If you decide to make your own just do one batch at a time 'til you get it perfected.  You'll find something that suits you to a "T" :)


At supper time serve this yummy mixture up with sour cream, guacamole and some sort of cheese.  I used my 3-Ingredient Crockpot Queso but shredded cheeses are delicious as well.  I didn't use homemade refried beans but that's something we do from time to time too.

If you've ever wanted to make a whole chicken in your crockpot... You'll LOVE this whole chicken slow cooker recipe.

It's a super easy recipe too!  You mix the spices, pour it over your chicken and cook it all day long.


The asparagus isn't a crockpot recipe but it makes up super easy and complements the dish really well.Bacon Wrapped Asparagus

Just take 2 to 3 asparagus spears, wrap them in a bacon strip, dab with the crockpot drippings and sprinkle on a bit of garlic powder and parsley.  Put them on a baking sheet and bake at 350 degrees for 18 to 20 minutes.  Nothing to it :)

You can also change up the spices.  Make up your own seasonings or use something prepackaged...it'll taste and look a bit different than the pictures here but it'll still taste delicious!


Whole Chicken Slow Cooker Recipe Step-by-Step

Gather Your Ingredients...Crockpot Chicken

  • 1 whole chicken
  • 1/2 stick butter, melted
  • 1 whole lemon, juiced
  • 2 tablespoons paprika (hold out half of it)
  • 1 teaspoon Himalayan salt
  • 1 tablespoon chili powder
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon garlic, dried or minced
  • 2 teaspoons thyme, dried
  • Leftover aluminum foil ~or~ a shallow glass pan

Mix the spices (less 1/2 the paprika) & half the butter... Crock Pot Whole Chicken Recipe


Place foil balls in crockpot...Slow Cooker Chicken

You can also use a super flat glass baking pan inverted...whole chicken slow cooker glass baking pan

Pour about a 1/2 inch of water in the bottom...

Even with me using so many veggies this recipe still only took about 7 minutes to prep.  So in my book, that's still fast.


Slow Cooker Breakfast Casserole Ingredients:

It LOOKS like a lot but it totally isn't.  4 necessary ingredients & 6 optionals on mine...and yours might be completely different :)

  • 12 eggs
  • 1 pound package of little smokies sausages ~or~ any type of meat you like
  • ½ cup milk or cream or mixture of the two (milk alone works but it isn't as creamy)
  • 1 teaspoon creole seasoning (completely optional)
  • 1 teaspoon minced garlic (optional but delicious to these taste buds)
  • 2 tablespoons mustard (optional again but give the sausages a little zip)
  • ¼ cup diced onion or onion mixture (yep, I used frozen and they're optional too)
  • ½ cup sliced mushrooms (optional for the mushroom haters of the world)
  • ¼ cup sliced black olives (optional again but super interesting flavor with the sausages and mustard)
  • 1 cup shredded cheeses (I used mild cheddar but am thinking sharp cheddar with this combo next round)crockpot breakfast

Toss everything in a bowl and mix it up.  Pour it in the crockpot and cook on low for 5 to 6 hours ~or~ high for about 3.

Quick Tip: You might have to either "tip" the lid or dab excess condensation off the eggs when it's done.  I had to, my friend that made it didn't.  I am guessing its the difference between crockpots and possibly milk vs cream...that's a guess.

A Super Easy Dip Your Crockpot Will Keep Warm All Day

Game Day's coming up...yep, everyone knows that.  And most times folks are looking for food.  Around here, it's mostly snacky sort of food after a big bowl of chili.  This crockpot fiesta dip is on the list of anticipated snacks too :)

This recipe only takes 3 ingredients and you can toss it in the crockpot, walk away and do whatever else you need to do.  It's a slight twist on the Velveeta classics and everyone around here loves it.

After an hour or two on low just come back and stir it.  Once your cheese is melted you can just turn it to warm and let the crockpot keep it warm, gooey and melty all day long.  No fuss, no worries.


Crockpot Fiesta Dip Ingredients

There are sooooo many different ways to make this recipe.  Your possibilities are pretty much endless.

ANY kind of ground meat, ANY kind salsa, ANY kind of Velveeta.  If you aren't a Velveeta fan and you have time...make your own.  I've not tried it yet but I've friends that say it works pretty well.  You can check that out here if you'd like.


Dice up your ingredients & toss them in the crockpot...crockpot dip

Butter, spray or oil it first...trust me.


Mix it up, cover & cook on low for 1-3 hours.cheese dip

Sorry for the vagueness on timing.  I had two different size pots going at the same time.  One was ready in 1 hour & about 25 minutes...the other took almost 3 hours.


Stir it up and Enjoy!velveeta dip

You can also add in stir-ins now (but I'd taste test it first).  Here are a couple ideas and things we've done over the years:

  • Pico de gallo
  • Diced Jalapenos
  • Cream cheese
  • Chili Seasoning
  • Taco Seasoning

Serve it straight from the crockpot, put some in a bowl, add chips, crackers, veggies, etc...Super big hit!

Cornbread's a Southern classic.  It goes with so many dishes that cook up great in the crockpot.  This bread is excellent made in a good ol' cast iron skillet BUT you can also make it in the crockpot.  Yep, you heard me right...you can make crockpot cornbread.

Unfortunately, it isn't a "cook all day" sort of thing.  And it isn't something I do often.  But as a lazy weekend thing or just 'cause you can...well YOU CAN!


It isn't difficult at all either.  I used Jiffy Mix for this recipe BUT you can also make you own mix in just a few minutes.  There's a classic version and a gluten-free version too!  Here's the link to make your own mix.

This recipe doesn't call for butter.  I only used butter to grease the slow cooker insert.  It was an experiment to see if it'd work and still taste pretty good.  It worked, it was yummy :)

Also, I used a round based crockpot.  I am not honestly sure if two boxes would work in the large oval.  It might be too thin to pop out without breaking into lots and lots of little crumbles :)  If you try it, let me know please.  I'd love to know if it works.

Crockpot Cornbread Ingredients:
  • 2 boxes Jiffy Corn Muffin Mix
  • 2 tablespoons sugar (optional but great for sweeter cornbreads)
  • 2 eggs
  • 1 can cream style corn ~or~ 1/2 can + 4 tablespoons butter
  • 1/2 to 3/4 cup milk (depending on how "soupy" your creamed corn is)

Butter the slow cooker insert, mix everything up in a separate bowl and spoon in. Cover and cook on high for 2 1/2 to 3 1/2 hours.

The time varies greatly depending on your crockpot.  Mine cooked up in 2 1/2 hours.  But this crockpot has a dial.  I honestly think most of these cook faster, but that's just my opinion.  I've a friend that made it in a digital slow cooker and hers took 3 1/2 hours.  So it's just a test sort of thing the first time you make it, then you'll know.

The edges on one side got a little too browned for my test but I've made much worse using cast iron.  It wasn't burned at all and had a crunchy outside and a moist inside.  Perfect cornbread for the folks around here.

This was a fun little experiment. Its a great recipe for your cast iron or a baking dish but the novelty of making this in your slow cooker is pretty cool too :) Also...your cooking time varies greatly depending on the heat your slow cooker puts off, the amount of liquid, etc. Just keep an eye on it the first time you make it. After that, it'll be a cinch!
