Potato Hamburger Casserole

Picky eaters.  Everyone feeds them at one time or another.  And everyone has times they need supper prepped fast.  This crock pot casserole dish handles both!

A reader requested a hamburger potato casserole recipe.  This isn't quite the recipe she requested but it's SlowCookerKitchen.com's adaptation of something pretty close!  The original recipe requested had celery in it.  And I couldn't use celery.  Not because I was cooking for a picky eater (this time), but because my father-in-law can't have celery with the medications he has to take.  Soooo...a slight adaptation was in order.

And this recipe is super adaptable and very easy too.  Hamburger meat and potatoes are the basis of course, but beyond that it's sort of a "what do you have on hand" or "what is everyone in the mood for" OR "he doesn't like that, but he likes this" recipe.  Aka...that picky eater thing :)

 Layered Hamburger and Potato Casserole Step-by-Step

Like I was babbling about above...if you don't care for/can't have an item listed in the ingredients...substitute.  A perfect example is the kidney beans in this recipe.  It can easily be celery instead.  A standard sized US can (something around 15 ounces) is 1 1/2 to 1 3/4 cups depending on the amount of liquid in the can.

You can just substitute the same amount of celery OR any other sort of bean or veggie you have/like.  There are not hard and fast rules for the recipe...it's super adaptable!

Ingredients

The ingredients I used for this hamburger potato casserole are as follows:

  • 2 pounds ground beef, fried and drained
  • 1 large onion, sliced thin
  • 6 medium potatoes, washed and sliced thin
  • 1 1/2 cups sliced carrots
  • 1 can kidney beans (drained)
  • 2 cans cream of mushroom soup (AHA another substitution possibility here...use the cream of celery if you use celery in the dish...YUM!)
  • 1/2 to 3/4 cup beef broth or stock (depending on how much sauce you'd like)
  • 1 cup shredded cheddar cheese

Layering Order

Mix up the cream soups and the broth/stock in a separate bowl and set it aside to combine.  Then layer the fried and drained ground beef, then the onions, carrots (or celery or beans or whatever)...THEN one more veggie of your choice (I did kidney beans) and then lastly, the potatoes.

Pour the soup mixture over the top and cover and cook that baby up to 10 hours! Psst...You do NOT have to cook it 10 hours. It will be ready around the 6-6 1/2 hour mark. But the beauty on recipes like this...and the slow cooker...it will not hurt it to cook longer if you can't tend it. :)

Then, about 10 to 20 minutes before you're ready to eat, sprinkle on some cheese.  Cover and let it melt.  The cheese is another optional thing.  Leave it off if cheese doesn't fit your diet...it's still YUMMY!


Recommended for Quick & Easy Crockpot Everything Burger!

Psstt!  That meat was COOKED right in the crockpot!  Soooo very cool!  All you need is a crockpot that has a saute/simmer setting!  They are super handy and clean up is a breeze :)  The meat and the onions both got fried right in the slow cooker!

Here's the one I use AND recommend!  It's called a Cuisinart MSC-600 3-In-1 Cook Central.  It's a true lifesaver for cleanup AND it's awesome if you're camping/RVing...cause its one less thing you need to pack!

I got the 4-quart model.  Not only because I didn't have 4-quart crockpot/slow cooker... because there are just two of us that live here now.  There are 6 and 7-quart options too!  This model does a whole host of things that take rockin' your crock to the next level...  You can check out the review on it if you'd like to read more in depth (next week).

Ingredients
  

  • 2 pounds ground beef fried & drained

Instructions
 

  • Mix the cream soups and the beef stock/broth in a separate canister and set aside
  • Layer the ingredients listed above in the following order:
  • Ground beef, onion, carrots, beans, and lastly the potatoes
  • Pour the soup mixture over the top.
  • Cover and cook. On low you can go as little as 6 1/2 hours. And I've cooked it as long as 10. It's done at 6 1/2 or so, but the flavors will combine and meld better if you can let it cook longer.
  • '20 minutes before serving, top it with cheese. Cover and allow to melt.

Freezer Meal Directions:

  • I purchased frozen carrots and potatoes for this recipe. I have just never had much luck with freshly frozen potatoes. The carrots are optional, fresh or frozen either one will work.
  • Toss the ingredients into a pre-labeled, 1-gallon slider-style freezer bag. In the following order: ground beef, then onions (or the ground beef mixture if you are using the make-ahead ground beef, then the beans and top with the creamed soups and broth.
  • Place the cheese in a separate 1-quart freezer safe bag.
  • Stack the frozen potato bag, then the carrots, cheese bag and lastly, the bag you just made up. Use freezer tape them all together.

Cooking as a Freezer Meal:

  • Butter or oil the crockpot insert.
  • Layer potatoes, carrots, then meat and bean mixture.
  • Cook 6 to 8 hours on low. Or 4 to 4 1/2 on high.
  • '20 minutes before serving, top with the cheese and cover until melted.

Step-by-Step Crock Pot Beef Barley Soup Directions

Wanna know how easy this soup is to make?  Yeah...get this...wash, dice, dump, and cook.  That's pretty much it.  And the beauty of it?  I mean besides it being so easy and quick?  It's healthy.

Shhh.  Don't tell anyone.  They'll never know!

Slow Cooker Beef and Barley Soup

I bought a huge roast to make this and another recipe with.  But if you want to save time, stew meat is a great option.  You can even substitute frozen veggies for the fresh if you're in a super big hurry.

Quick Note:

If you're going to be working or out-and-about all day...adding the higher end of the beef stock amount would probably be best.  What I mean here is this...in the recipe I say 2 to 4 cups.  I'd add at least 3 cups if I was going to be out all day.  The barley is like any other grain (though this one is super high in protein...much higher than quinoa) and it'll absorb a LOT of liquid.

You don't want to come home excepting there to be a slow cooker full of warm, delicious comfort food waiting and find a burnt, nasty mess instead.  So adding a bit more liquid will keep that from happening.

  • 2 lb(s) beef roast OR stew meat

Instructions
 

All Cooking Versions

  • Dice up your meat and carrots (if needed)
  • Optional step: Brown the beef and onions (it's yummy if you do...if you aren't sure how to check out Crockpot Ranch Beef Stew for the directions)

Crockpot Directions

  • Complete the "All Cooking Versions" steps
  • Toss everything in the crockpot and stir it up
  • Cook on low for 8 to 10 hours
  • Add more beef broth, vegetable juice, or water to get to your desired consistency.

Instant Pot

  • Do the "All Cooking Versions" above. You can use your saute function for about 5 minutes for step #2 if you want.
  • Stir well, close the lid, and vent.
  • Set to manual high and cook for 25 minutes. Quick-release and allow to sit for 10 minutes. Stir and serve.

Stovetop

  • Complete steps 1 and 2 from "all cooking versions"; in a large, deep skillet, over medium-high heat.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat to low, cover, and allow to simmer 45-50 minutes.

Freezer Meal Directions

  • Complete steps 1 and 2 listed above; if you brown the meat, let it cool.
  • Then toss all the ingredients in a Ziploc bag, label, and freeze for up to 2 months.

  • The only difference for the freezer meal directions is hold out the cornstarch and slice the mushrooms.
  • Just toss everything in a bag and on the label make a note to add the cornstarch-water 30 minutes before serving.

A Slight Mod on the Classic Green Bean Casserole

This recipe only has a slight modification from the classic yumminess of French's Recipe.  Instead of regular milk, I used evaporated milk.  Not because their recipe needed improvement...because those of us that love this classic know it doesn't need that.

Regular milk is a gamble in the slow cooker.  I don't know the science behind it.  It just doesn't work out through a long cooking process always.  Now me personally, I've always had great results with regular milk when I make this Crockpot Potato Soup, but not with many other recipes.  It can separate and make a meal that is usually delish, look (and sometimes taste) rather gross.

So I decided to give evaporated milk a shot...and it was a huge success!  So if you need to free up some oven space, give it a shot...and Rock that Crock!


Step-by-Step Crock Pot Green Bean Casserole Recipe

The crockpot version is just as easy as the classic!

  • Open your green beans and if you're using canned ones, drain them
  • Toss all your ingredients in the slow cooker (excluding half the fried onions)
  • Mix well and top with the remaining onions

I've not tried this recipe on high yet, so I don't know if it will work as quite as well.  Let me know if you try it, I'd love to know...and I'll update this recipe once I give it a shot too :)

Ingredients

  • 12 ounces evaporated milk
  • 4 cans green beans drained
  • 2 2/3 cups crispy fried onions (2 large canisters)
  • Salt and/or Pepper to Taste

Instructions
 

Slow Cooker

  • Add all the ingredients to the crockpot except one canister of fried onions.
  • Stir well to combine and top with the remaining canister of fried onions.
  • Cover and cook on low for 6 to 8 hours.

Oven-Baked

  • Mix the soup and milk in a bowl. Add the green beans and one canister of the fried onions. Stir well.
  • Pour into a 9x13 oven-safe dish. Bake in a preheated 350 degree oven for 30 mins.
  • Top with remaining fried onions and bake for 5 to 10 minutes.

Freezer Meal

  • Label a 1-gallon freezer bag with the name and date.
  • Pour 1 canister of fried onions into a sandwich bag, remove as much air as possible, and set aside.
  • Pour the soup and milk into the labeled bag. Close and knead to mix. Open and add the drained green beans and the remaining canister of fried onions. Close and gently knead to mix. Open bag and drop in the sandwich bag. Close while removing as much air as you can. Freeze for up to 6 weeks.
  • To Cook
    1. Defrost in the freezer overnight.
    2. Remove the sandwich bag of fried onions.
    3. Pour green bean mixture into a buttered/oiled slow cooker insert or baking dish.

It does here too.  Even though I run a cooking website.  Life happens.  I've run into situations in the last couple months when there was nothing cooked!  Insane yes, but true.  So I wanted to make some freezer meals.  And boy, oh boy it happened BIG TIME.

How Long Did It Take?

I intended to sit down after we pulled this off and write everything out.  I didn’t.  I had one of those “life happens” times…and it lasted over a week.  Insane, I know.  But everyone has them.

And today was finally the day to sit down and write this out and share.  Part of the notes we wrote down were for both of us…and part of them were for one of us.  So sadly, I don’t have any idea how long it took.

After totally everything I came up with 100 minutes.  THAT is before clean up time and AFTER we had all the supplies lined up.  I know that cleanup took about 30 minutes for each of us.  I know because I was simply shell shocked we were completely done with this in one afternoon!

AND That 100 minutes included the time to take pictures.  So while I was taking pictures, Dora was making labels, cleaning and pretty much being my assistant.  I'm not used to having one of those in the kitchen since my daughter is grown :) It was completely insane.  And it was actually fun.  So if you get the opportunity to have a partner, do it!  It'll take the boredom away and turns it into a fun time.


How Many Crockpot Freezer Meals Did We Make?

Are you ready for this??? We made 110 freezer meals! NOT 110 recipes.  I am not completely insane...8 recipes, 110 meals.  One of them...the crockpot pierogies and sausage meal.  We made TONS of that.  It didn't all go in the freezer.  Part of it went straight in the slow cooker for a huge meal requested by another friend.

Crock Pot Freezer Meals Lists & Printables for Cooking

I wasn’t sure quite how to do this.  I mean YOU might not want to make 24 servings of Crock Pot Pierogies & Sausage (We didn’t eat all that…a HUGE batch was given away).

So, this is how I did it.  I hope it all makes sense.  If I confuse you or you need anything else, just get ahold of me via contact or Facebook.

Slow Cooker Pierogies and Sausage Casserole

The Slow Cooker Pierogies and Sausage Casserole came out to 24 total meals...which btw makes a deliciously cheesy crock pot potato casserole sort of thing...these took 5 minutes to assemble.

We made up two bulging quart bags for her and she later told me it made her 3 very filling meals...so that's 6 meals

We also made up 2 gallon sized bags for me and the hubs too.  Thankfully I didn't fill them to the top.  Because each gallon sized bag made us 2 meals each, plus a lunch sized portion each as well.  I'm going to average the two lunch-sized portions as 1 dinner each.  So 5 meals per bag and 10 meals total.

I also sent my Cook & Carry Crockpot to work with yet another friend.  8 people had a full plate out of it.  I don't know if there were leftovers or not, so I am not counting anything there.

You can check out the printable recipe to see the quantities but I tripled the top one that's for 8 to 10 people.  That's the amount included in the grocery list.  If you want to make less, just divide the ingredients on the grocery list by half or a third.

The recipe page includes breakdowns for much smaller quantities if you just want to toss it together...it also has the freezer directions included for the largest quantity, but you can always do less if you like.


Crock Pot Chicken and Rice Soup

Next came the Crock Pot Chicken and Rice Soup came out to 12 meals for all of us. And we doubled the quantities over on the recipe page.

The only prep work on that was washing and dicing the potatoes.  And then dicing up the chicken.  Everything else, you toss in your freezer bags, squeeze out as much air as possible, label and freeze.

The potatoes took 5 minutes to wash and dice and I bought bagged frozen vegetables for the time savings.  The chicken took about 5 minutes to dice up as well.  Filling the bags took an additional 5 minutes to deal with...so 15 minutes’ total on this recipe.

There are two notes about this recipe you need to be aware of.  Freezing the potatoes and the milk...

Some people have great luck freezing potatoes, I usually don't.  I've had some epic, nasty fails over the years with this one.

I'm happy to say it worked this time BUT that leads into the deal with the milk...you can NOT substitute regular milk for this crock pot meal unless you don't add it until the end.

This recipe is designed so you "dump and go", no adding more stuff later.  Regular milk can separate.  It doesn't always.  I've always had great luck with my Crockpot Potato Soup but it has other stuff in it that I think helps.  I've not studied up on it so that's a guess.

And to backtrack about those potatoes...this freezer meal had the broth and the milk to coat the potatoes.  I am pretty sure from everything I've read that it makes a sort of barrier/coating to keep them from getting gross.


Crock Pot Chicken Pot Pie Soup

Crock Pot Chicken Pot Pie Soup turned out to be almost a duplicate of the Chicken & Rice Soup. And by duplicate, I mean the preparation process NOT the taste.

We managed to get 12 meals out of this one.  The servings aren't physically as big because the consistency is so much thicker.  But they don't need to be...This is super filling.

It's also creamy and delicious AND works great if you don't have time to make Crockpot Chicken Pot Pie.  If you've time to make biscuits, they pair up with this dish perfectly.


4-Ingredient Slow Cooker Beef Tips

The recipe for Crock Pot Beef Tips and Gravy turned out really well too!  Not just in taste…which was awesome… but in the prep department.

The most time-consuming thing here is chunking up the meats.  And since we tripled this recipe…we needed 6 pounds of meat for this.  That’s a LOT of meat!

If you want to shave off even more time, buy beef stew meat.  I bought this roast because it was on sale…and I try to balance the convenience of freezer meals with both saving money and health.

And speaking of health…there are several options for low and no-sodium options discussed on the beef tips post.  So if you'd like to limit your sodium intake, you can check that out here.

Anyways…total time to chop up all the meat…and bless my husband for the awesome knives he bought me…was 15 minutes.  And bag assembling took just 4…so 19 minutes’ total for 18 freezer meals.

AND...though it isn't listed in the shopping list stuff...you can also do Make-Ahead Crockpot Rice and freeze it for later.  It pairs up perfectly with this recipe.


Crock Pot Beef and Broccoli

Our version of Americanized Chinese is this Crock Pot Beef and Broccoli.  Love, LOVE, LOVE me some Chinese.  If you love Chinese too, this is an awesome option when take-out isn’t an option…

We made 2 batches of the printable recipe.  I honestly forgot to write the number of servings down on this one.  I know it made at least 6 per recipe…possibly a bit more.  But for the sake of frugality, we’ll go with 12 total meals.

Crockpot Beef and Broccoli

Now…here’s another place you can save more time than I did…I bought whole mushrooms and had a huge chunk of meat.  If you want to save even more time, then purchase pre-sliced fresh mushrooms and pre-cut steak strips.

For me, it took 18 minutes in total assembly time.  3 pounds of roast took me right at 6 minutes to slice up (I’d finally gotten in the groove after slicing up the beef tips for the Beef & Gravy…bootie dance time).  The mushrooms, washed and sliced about 5 more minutes…and the onions 3 minutes.

I try not to rush on onions.  I’ve slipped a few times in the past when cutting onions because they are a bit slimy sometimes.  I’d rather not go super-fast on them and chance slicing myself.

Bagging it all up took about 4 minutes.  We did two large zipper bags.  My friend doesn’t like beef and broccoli so this all stayed here for us.

Total time for the beef and broccoli was 18 minutes.  That might sound like a lot but not really…it made the two of us 6 dinners (12 total servings).

This recipe also pairs up awesome with our freezable crockpot rice…which you can cook then freeze in individual servings…you are gonna rock that crock any night you choose!

Okay, okay…on to the next crockpot freezer meal...


Crock Pot Chicken and Noodles

This crock pot freezer meal was delish!  Our version of Crock Pot Chicken and Noodles is a LOT like our Crock Pot Beef & Noodles too...either one (or both) make awesome freezer/"dump and go" crockpot meals...

AND cutting up the chicken takes much longer than anything else…it’s really the only thing you have to do except bag it up.  Two timesavers for this freezer meal…if you have the opportunity…BUY CHICKEN TENDERS.  Buy chicken tenders and don’t cut them up.  Honestly, they’ll be easy to pull apart after they cook.  This alone would save you 10 more minutes.

Yep, cutting up the chicken breasts took 10 minutes.  Depending on how you buy it, your chicken will either be frozen or fresh…

The key...I am told... to cutting up frozen chicken is to only partially let it thaw.  I always seem to get side-tracked or busy doing something else and forget to do it at the right time.  So mine’s always defrosted no matter if I buy it frozen or fresh.

And then it is slimy.  I know I already said that about the onions…but raw chicken is sorta gross, no matter what you do with it.  And like the onions, I opted to go a little slower cutting it up.

We made up this freezer meal x 2.  2 large (gallon sized) with 4 servings each, so 8…2 quart-sized with 2 servings each, so 4 and then one batch went straight in a crockpot to cook up for hubby’s work the next day.  5 minutes to assemble the bags and 2 to tape them together…you can read about that on the recipe info…it’s just an alternate way to keep the ingredients together.

So all in all, 16 total servings and 17 minutes in total to assemble.


Crockpot Ravioli Casserole

This Crockpot Ravioli Casserole tickled me.  I am guessing only food geeks feel this way at times.  But it totally did it for me, so I guess I’ll have to claim that title :)

It’s really, really good!  It pleases anyone that likes Italian or even Chef Boyardee.  And it took a grand total of 6 minutes!

Slow Cooker Meatballs & Ravioli


There are multiple printable recipes on this one…you can pick the one that works best for your crew.  We used the printable for 4 to 6 servings and doubled it.  I honestly wish I’d bought more meatballs.  But alas, I didn’t…so we only got 8 servings out of this one.

There’s nothing to do for this crock pot freezer meal except bag the shredded cheese separately then dump everything in the bigger bags.

It took a total of 3 minutes for them all…and that was the two of us working on it…so 6 minutes’ total.


Crockpot Vegetable Chowder

I didn’t intend to make this Crockpot Vegetable Chowder when we started this cooking bonanza.  It happened because I bought HUGE bags of frozen veggies.  Like 5-pound bags of both broccoli and mixed veggies.  And KNEW after the freezer meals went in the freezer there wouldn’t be room for them because of the shape of the bags.

But I thought if everything laid flat, it would fit.  It did! :) Soooo…we got a vegetable chowder out of the deal too!

If you’ve never had vegetable chowder, it’s a lot like broccoli cheese soup.  It’s rich and creamy and really good!  And super easy.  You literally dump everything in the freezer bag OR the crockpot, stir, and cook.

We made up a one-gallon bag and two smaller quart bags.  It was 1 printable recipe split up between us.  So 8 servings and 4 minutes.

Crock Pot Beef Basics

This isn't gonna be about "Butchering 101".  I'd flunk personally.  There are so many different cuts and a lot of them have several names.  It's confusing.  Or at least I think it is.

It's one of those things that does not compute for me no matter what I do.  Like Spanish.  Or French.  Or any other language honestly.  That's my daughter's gift.  I didn't retain any of the ability...I passed it all to her :)

If that's something you want to learn about, there are charts all over the internet.  And a lot of them can help.  I, personally, can never remember what each cut is.  So try to stick with the basics.

But that being said, even sticking to the basics...you need to stay low fat on crock pot beef recipes.  Beef roast IF you are serving them as a slice of beef, that's slightly different.  You can have a decent ribbon of fat and it's no big.

BUT if you're gonna shred the meat, make it into meatballs or use raw ground beef in the slow cooker...low-fat is your best option.  It's healthier and it'll cook much better too.


Slow Cooker Beef Recipes Breakdown

So what's on this list?  Some of the recipes are by Slow Cooker Kitchen, some are from other bloggers.  No, I haven't cooked them all.  I've read about all of them and made something in the past a lot like all the recipes...but I've not made every single specific recipe listed here.

There also aren't a lot of duplicates.  This list isn't comprised of ten different ways you can serve beef tacos.  I've got lists like that.  Those are cool too...they'll get published shortly :)

This list is sorta like one of each...or pretty close.  It isn't perfect, but then neither am I :)

Crock Pot Beef Recipes...In No Particular Order

The only semblance of order for this list is separating beef roasts and/or steaks from ground beef.  There are SO many times when a recipe calls for "sirloin steak" you could easily use something else.  Especially when you're talking about crock pot recipes.

The crock pot is one of the most forgiving kitchen appliances you will ever use.  It makes just about any tough cut of beef so tender you can cut it with a fork...and there are lots of recipes that can be overcooked for hours without gross consequences.

Crockpot Beef Recipes...Using Ground Beef

Just a quick reiteration...you really need to use super low-fat meat if you are actually cooking the meat in the crockpot (aka: meatloaf, stuffed peppers, etc)...it can get sorta gross if you don't.

If you don't have any or can't afford it that's cool too.  Been there and done it many times...just be ready with paper towels to "dap" the meat to get the grease off before you eat.

If you like chicken, ranch OR mushrooms...you'll love this crockpot ranch chicken dish!  It's super easy, healthy and very tasty too.  It's perfect served or rice or pasta either one.

You can also cut back on the broth if you want.  Then it'd be good just to eat on it's own.  You could do that with what's here too, you'll just have a lot of broth left over.  Whatever you want, it'll work!

This was a pretty big batch...it made us (two folks)...4 meals.  We had it over rice one night, pasta another and on it's own with nothing else another.  Honestly, I don't remember what I did with the last of it.  I am pretty sure I froze some and gave it to a friend so I could keep cooking and not waste any food :).  I hate wasting food.

Tasty & Healthy Too...

I'm not super big into health food BUT I try to balance it.  Healthy for several days and then a splurge of sorts with something like Crock Pot Beef and Noodles or Slow Cooker Spaghetti.  And exercise.  I'm trying to add in exercise as well.

AND that's got nothing to do with crockpot ranch chicken except the health part.  Balance is the word of the day and the direction of choice around here.  Nothing super severe 'cause it won't stick if we go that route.  So healthy choices and decently good for you foods several times per week and a couple splurges tossed in...this is a pretty healthy choice.


Crockpot Ranch Chicken Serving Suggestions

You've got lots of serving options with this.  It had just enough broth to serve it as a thick soup/stew of sorts...but if you aren't looking for a soup you can also serve it over rice or pasta.

Healthy Options for rice and/or pasta...but how healthy is that right?  Well, it is if you get the right stuff.  Brown rice (in moderation) is healthy.  White rice, I'm personally on the fence on that one...but we do eat it.  Usually, we eat half and half on rice.  Half brown and half white.  And guess what?  You can make rice in the crockpot too!  If you wanna learn how to cook rice in the crockpot, no worries.  Here's ya go.  Just click on the picture and it'll take you to that recipe.

If rice isn't your bag, you can also get good for you pastas too.  There's everything from brown rice pasta to quinoa pasta available now.  Most every health food store and/or health food sections of the big grocery stores stock some.

I've personally tried several and the only major difference is brown rice pasta cooks faster...at least in my experience.  Ohhhh and there's this bean pasta you can get from Amazon.  We personally LOVE IT.

Each one has a different flavor and a couple look really weird cooked.  But they taste good!  So if you're looking to stay with quick and easy but still wanna health it up a bit, this is a great option.

Step-by-Step Ranch Chicken for the Crock Pot

As it sets, this one isn't a freezer meal.  It can be, but you'll either need to pre-cook it and then freeze OR use canned mushrooms.  Fresh mushrooms freezer really gross.  If you can do it and they come out well, let me know how, please.

Anyways, it isn't a freezer meal but it is STILL quick and easy...here we go...

  • Dice and slice the chicken and onions
  • Toss the chicken, mushrooms, and onions in the crock
  • Pour on the broth and sprinkle with the ranch seasoning
  • Cut the butter into thin pats
  • Cover and cook for 4 to 6 hours

Slow Cooker Ranch Chicken and Mushrooms Step-by-Step

  • 30ish minutes before serving mix the cornstarch and water together.  You HAVE to use cold water.  If you use warm or hot, the corn starch won't mix well and it becomes a globby mess...

Crock Pot Ranch Chicken

  • Pour the cornstarch mixture into the crock, cover and turn to high for about 30 more minutes
  • Serve however you want (see the suggestions above)

Psstt...I didn't use either the squash or zucchini in this recipe. For two reasons. It's fall and what was in the grocery looked gross was one. Two, my garden is giving up the ghost for the year...epic sadness for me. Oh well, it'll be back soon :) IF you can find squash or zucchini that looks decent OR if you grow it during the season...it's delish in this recipe!

Ingredients
  

  • 2 pounds chicken breasts cut into bite sized pieces
  • 1 canister mushrooms
  • 1 cup chicken broth
  • 4 tablespoons butter optional
  • 2 packets ranch seasoning
  • 3 tablespoons corn starch + 1/4 cup cold water
  • 1 onion optional
  • 1 zucchini optional
  • 1 squash optional

Instructions
 

  • Use a tiny bit of the butter to oil the crock
  • Dice the chicken and slice the onions
  • Toss the veggies and chicken in the slow cooker
  • Pour the broth over the top and sprinkle on the ranch dressing
  • Cover and cook 4 to 6 hours (time varies depending on how large your chunks are and how hot your crock cooks)

30 to 45 minutes before serving

  • Mix the corn starch and water in a separate bowl
  • Slowly pour into the crock while stirring
  • Cover and cook on high until thick and bubbly (about 30 to 45 minutes)

Serve over rice or pasta OR increase the chicen broth a bit and make a delicious soup too!

    Freezing Crock Pot Rice

    You betcha!  You can freeze it!  You can cook up a huge batch, freeze it in portion sized baggies or canisters...and get it out as you need it.  If you freeze it pre-cooked and flattened out in baggies it will defrost in about an hour.

    So you can make a huge batch, freeze in stacks and get it out when you cook a meal in your crock that sounds good over rice.  Just pop crock pot freezer meal in your slow cooker and toss a bag of crock pot rice in the refrigerator...it will be defrosted when you're ready for supper :)

    Pre-cooked crock pot rice will last about six weeks frozen.  I've never frozen it for longer than that and had good results.  If you use a Foodsaver and get more air out of the bag, it will probably last longer.  But Foodsavers are good that way, they make everything last longer.  I've just haven't had the opportunity to try it yet.  It's on my winter to-do list though!


    All Sorts of Rices

    I'm not gonna go in to all the kinds of rice there are.  I have read (but not researched) that there are thousands.  I like rice.  But I don't care enough about it to research a thousand different kinds.  I can tell you though, that for making rice in your slow cooker long grain rices work best.  I don't know why and I don't know the science behind it...but they do.

    You can easily cook either white or brown rice in your crock pot.  Either one works great.  They have slightly different water requirements but both work.  I usually mix mine half and half.

    Crockpot Brown Rice

    I tried migrating my family over to completely brown rice many years ago.  It didn't fly.  And even after my kiddos grew up and moved away, hubby didn't care for straight brown rice.  Honestly, neither did I...so we still do half and half most times.


    Add-Ins for Making Crock Pot Rice

    I didn't make a huge batch of rice and freeze this round.  Just a smaller amount.  You can make as much as your crockpot will hold frankly.  But rice GROWS.

    Just like making it any place else, it's gonna grow in your slow cooker too.  So only fill the crock about 1/2 to 2/3's full of both rice and water.  That way it'll have plenty of room to grow and not make a mess.  Cause it sure will make a mess if you overfill it.  It also won't cook properly and you'll have to toss it out.

    You Can Add Herbs, Spices & Even Broth

    You can see in the picture above I'm adding dried spices to this batch.  You can, you don't have to.  You can add just about anything and it will cook right into the rice.

    You can also add broth or stock for more delicious flavors.  I've never tried to cook it solely in broth or stock but I DO know you can use half water and half stock and the rice cooks very well.  It adds additional flavor and lots of health benefits too.  So it's a good alternative if you like/use it.


    Step-by-Step Rice in the Slow Cooker

    This part's super easy.  So here we go...

    • Choose any long-grain rice you like
    • Decide on any herbs and spices you'd like to add
    • Grab any sort of broth or stock you'd like to useMaking Rice in the Crockpot

    Crockpot White Rice

    When making white rice in the slow cooker you'll need to use a ratio of 2:1.  Two parts liquid to one part rice.  That's it.  Toss the rice in the slow cooker, add any spices you'd like then add twice as much liquid as rice.  FYI, no salt.  If you want to add salt, do it after it's cooked, not before.  Adding salt before hand makes the rice stay a bit hard.

    Crock Pot Brown Rice

    Making brown rice in the slow cooker works the exact same BUT you need a slightly higher amount of water. You need a ratio of 2.5:1... So,  for every 1 cup of brown rice you'll need to add 2 1/2 cups of liquid.


    Cooking Times for Rice is the Crock Pot

    Once you've added your spices (if you're using them) and your liquids...simply stir up everything and cook on high for about 2 hours.  Sometimes it'll take 1 1/2 hours, sometimes 3.  It all depends on how much you cook, how hot your slow cooker runs (because they call vary a lot) and how big of a batch you cook.

    Do yourself a favor and rub the crock insert down with butter, olive or coconut oil before cooking too.  It makes cleaning up a breeze!

    How Much Rice Should Your Cook?

    Your end results will vary a little bit.  Everything does.  Like I said earlier, there are a LOT of kinds of rice out there.  But if you use long-grained rices and NOT anything quick-cook.  You should be about 2 1/2 times whatever you started with.

    So, here's an example...

    If  you use 1 cup of long-grained white rice, 1 cup of sodium-free chicken broth, 1 cup of water and 1 teaspoon of whatever herbs you want...you should get about 2 1/2 cups of cooked rice.

    For the recipe in the picture below I cooked 1 cup of white rice, 3/4 cups brown rice, 2 tablespoons of various herbs and 4 cups of water.  I got just shy of 4 cups in total.  So with that knowledge, you'll know how to plan a little :)

    Final Notes on Crock Pot Rice

    If you decide to use broth or stock for more flavor here are two things that will help it come out well:

    1. Use half broth or stock and half water.  Some people have had excellent results using full broth instead of adding any water.  I, personally, have not.  If you try it and get it to work well, let me know.  I'd love to know the secret.  BUT full broth/stock really isn't necessary.  You still get wonderful flavor using only half stock/half water.
    2. Try to find low-soduim or sodium free stock or broth.  Just like adding salt to your spice mix before cooking...using salty stock is going to make your rice not quite so tender.  And sodium-free broth is more healthy for us anyways.  You can always add salt later.  But sea salt and Himalayn salts are both much more healthy than regular table salt...some of that's opinion, most of it's medical fact :)
    3. If you DO decide to use spices (like I did in the pic above) AND you use bay leaves.  Make sure to remove them after your rice is cooked.  Bay leaves impart a delicious flavor to almost any soup or stew and they are awesome in rice BUT you can't eat them.  They have to be tossed out.  Humans can digest them and they will cut your throat too.  So it's best to remove them before you serve or freeze your crock pot rice.

    Cooking brown rice in the crock pot isn't any more difficult that cooking white. It only requires a bit more liquid of some sort. By that I mean you can use all water or you can you half stock or broth. This adds more flavor and more nutrition as well. Try to use sodium free stock/broth and don't add salt (if you decide to use it at all) in with your spices...leave the salt until after its cooked and your rice will come out fluffy and delish!

    Like I was saying earlier...the biggest thing is making the layers.  The pasta needs to not touch too much and it needs to be kinda sprinkled in.  This recipe uses linguine noodles.

    I am sure thick spaghetti noodles would work too.  But NOT angel hair for this. I'm pretty sure that would just turn to mush.

    • 1 to 1 1/2 pounds meatballs whatever kind you like
    • 3 24 to 26- ounce jars of spaghetti sauce
    • 1 pound linguine or thick spaghetti noodles
    • 1 8- ounce canister Chive & Onion Cream Cheese optional
    • 1 cup mozzeralla cheese
    • 3/4 to 1 1/2 cups beef broth depending on how soupy you want your spaghetti
    • 2 cups water instant pot recipe only

    Instructions
     

    Slow Cooker

    • Pour jar #1 of the pasta sauce and 1/2 cup of the beef broth in the bottom of the slow cooker.
    • Break the pasta in half. Sprinkle half of it on top the sauce (scatter it around so it's touching as little as possible).
    • Pour in the meatballs and top with the other half of the pasta.
    • Spoon out chunks of the cream cheese and place them all around the crockpot
    • Top with another pasta sauce and sprinkle on the mozzarella cheese.
    • Cover and cook on high for 3 1/2 to 5 hours (I've never tried it on low).
    • You can either stop here and eat or you can continue with the directions.
    • Stopping here will give you more of a spaghetti casserole with a lot less sauce.
    • If you want a more traditional, creamy cheesy pasta...continue with the directions below
    • Uncover and stir well. Add as much of the pasta sauce and remaining beef broth to get the sauce to the consistency you prefer. I added another full jar of sauce and another 1/2 cup beef stock.
    • Cover and cook on low until heated (20 minutes or so); or even up to 2 hours if you have other stuff to do.
    • If you're gonna be busy more than 2 hours, just turn it to warm and it's fine for several hours.

    Instant Pot

    • Pour frozen meatballs into the bottom of the insert. Stop with broken spaghetti noodles and spread them out just like in the slow cooker directions/images.
    • Add 1 to 1 1/2 cups of beef broth and 2 cups of water. Top with spaghetti sauce and cream cheese. Don't stir.
    • Set to manual high for 9 minutes. Allow 2 minutes natural release, then quick release. Stir well and serve.

    Oven-Baked

    • Preheat the oven to 350 degrees. Prepare the pasta according to package directions for al dente.
    • Butter or oil a 9x13 casserole dish. Pour one jar of spaghetti sauce into the bottom of the casserole dish. Add al dente spaghetti noodles.
    • Add the frozen meatballs in a single layer and pour the second can of pasta sauce over everything.
    • Mix the softened cream cheese and at least 1/2 cup beef broth. Mix well and pour over casserole.

    1 pound spaghetti 114 cup olive oil
    2 cloves garlic, minced 3 onions, chopped
    1 tablespoon tomato paste
    1 teaspoon ground black pepper 1 teaspoon ground cumin
    1 teaspoon dried thyme 4 tomatoes, juiced
    1 cup water
    114 cup ketchup
    1 pinch salt
    2 cups shredded mozzarella cheese, divided
    1 (2 ounce) can black olives, drained
    1 green bell pepper, sliced in rings"
    Preheat oven to 350 degrees F (175 degrees C).
    In a large skillet over medium heat, heat olive oil. Saute garlic and onions in oil until tender. Stir in tomato paste, black pepper, cumin, thyme, tomato juice, water, ketchup and salt. Reduce heat to low, and simmer 15 minutes.
    While sauce is simmering, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

    1 (8 ounce) package fresh mushrooms, sliced

    I know, I know...this isn't EXACTLY part of a crock pot recipe.  But it is SO COOL!  And it's so very easy too.  It's also a great time saver.

    You can bake it anytime you have spare time.  Then drain it, cool it and freeze it for quick and easy meals.  BUT, you really don't need extra time anyways.  When you bake bacon you don't have to babysit it like you do in the skillet.

    You simply place it on a pan, put the pan in the oven and bake at 400 for 12 to 15 minutes.  I did this in my toaster oven...

    Now that doesn't always mean it's gonna go in the crockpot around here.  I mean who can resist a BLT every now and then?  You maybe, not me ;)

    The prep work for this recipe is pretty dang easy.  You slice grooves partially through the tenderloin, stuff in the ingredients and toss it in the crock.

    And lastly, pour the maple syrup over the top.  Then cover and cook on low for 5 1/2 to 8 hours.  The longer you cook it, the more it's gonna fall apart.  But fair warning, over 7 or 8 hours, and you'll be chancing it drying out.  But then you can always shred it and turn it into shredded pork sandwiches of some sort.

    I've never done that with fresh herbs, but I'd be game to give it a shot :)

    Freezer Meal Directions

    This is a really cool, sorta elegant freezer meal too.  I'd use dried herbs and mince the garlic if I was freezing it.  Other than that...just toss it in a ziplock bag and then defrost it overnight before cooking it...

    There's no magic, no bells or whistles, or anything difficult about this recipe.  What you see is what you need.  NO extra water, milk, or anything else.  You CAN add a little water or beef broth if you're going to be gone longer than 6 to 8 hours but it isn't necessary.

    Also, you can use any sort of beef.  I caught chuck roast on sale for $2.95 a pound.  It was rather rough and I wouldn't have wanted to cook it any other way but in the crockpot.  But then again, that's one of the things that slow cookers are excellent for...cooking cheaper cuts of meat.

    It seems no matter how rough a chunk of meat is, the slow cooker can turn it into super tender deliciousness.  But also, be forewarned...if you get a super cheap cut (like I did above) you may have to cook it longer than 8 hours.

    I think it took about 9 1/2 hours for this cut to cook to the point I was happy with it.  I only lifted the lid once (so there wasn't a lot of chance for the moisture to evaporate) and I did not add any more liquid.  Nothing burned either, just FYI on all that.

    If you have to watch your sodium intake, there are options for you on this recipe too.  You can see in the picture above that there is a Healthy Request version of the Golden Mushroom.  I don't think there's a low sodium version of the cream of onion BUT there is one for Cream of Celery.  There's also one for Cheddar Cheese.  Either one would work in this recipe...and the cheesy one sounds really good to me right now :)

    You can also make your own Onion Soup Mix.  All Recipes has a good one that would take too long to mix up.  You can also find a low-sodium and sometimes a sodium-free version at many health food stores.  If you can't find it that route, there are a few options on Amazon.  This one has the best ratings.

    Boy, this is a rough one.  Ready?  Dump it all in a bag, label it, and freeze.  Really, that's it.  There's no other prep work unless you decide to add veggies.  And just about any vegetable, you can think of works with this recipe...so if you want, give it a shot.

    I've personally tried broccoli, onions, mushrooms, and a peas & carrots combo.  All of them turned out well.  Just make sure if you use the broccoli to do it like the freezer meal directions on our Crock Pot Beef and Broccoli.  If you don't your broccoli will disintegrate.  And if that happens it's still edible but a bit odd.

    Also, I gotta tell you...for anything concerning a freezer bag and food.  These baggie holders ROCK!  They work for quart and gallon baggies both.  They sorta "zip" up and down to hold either size.  Also, the fold flat for storage so you don't have a bulky something to store.  They are quite literally like having an extra set of hands in the kitchen...and again, they ROCK!

    I didn't buy these until last year.  I'd looked at them quite a lot longer but they are awesome, super handy, and not expensive at all.  They were when I purchased them.  And there was only one option then too.  Which is exactly why I held off.  Now you have lots of options...

    Ingredients
      

    • 2 pounds beef stew meat or 2 pounds beef roast diced
    • 1 can(s) golden mushroom soup (10.5 oz each)
    • 1 can(s) cream of onion (10.5 each)
    • 1 packet(s) onion soup mix
    • 1 cup(s) beef broth

    Instructions
     

    Crockpot Method

    • Combine all the ingredients in an oiled slow cooker.
    • Cover and cook on low for 6 to 8 hours.
    • Stir and add a bit more beef broth if it's too thick for your taste.
    • Serve over pasta, rice, or bread.

    Instant Pot Method

    • Add ingredients in the following order: beef, soup mix, broth, soups. Do not stir.
    • Manual high 10 minutes. Natural release 5 minutes, then quick release.
    • Stir and serve as desired.

    Stovetop Method

    • Melt 1 tablespoon of butter over medium-high heat. Add beef and saute 2-3 minutes on each side.
    • Turn burner to low and add 1/2 cup beef broth and onion soup mix. Stir.
    • Cover and cook on medium-low for 12 to 15 minutes.
    • Turn burner to low, add cream soups and stir well. Cover and cook on low for at least 8 minutes. Stir occasionally.
    • Serve over rice, rolls, or pasta of choice.

    Freezer Meal Prep

    • Add ingredients to a 1-gallon freezer bag in the following order: meat, soup mix, soups.
    • Make a note on your label that you'll need 1 cup of beef broth when cooking.
    • Defrost in the refrigerator overnight before cooking.
    • Freezer to Slow Cooker: Pour ingredients into the slow cooker. Add about 1/2 cup beef broth. Cook as directed. If cooking from frozen, add 1 to 1 1/2 hours to cook time.
    • Freezer to Instant Pot: Cut bottom out of the bag. Pour into the instant pot. Pour 1 cup beef broth around ingredients. Cook as directed for Instant Pot method.

    Notes

    Using the beef broth is optional for the crockpot and skillet methods. You NEED to use 1 cup of beef broth for the instant pot method. If the gravy is not thick enough, use a corn starch slurry to thicken.

    Skillet Beef Tips3 tablespoons vegetable oil 1 onion, chopped
    2 pounds cubed beef stew meat 2 cups water
    1/4 cup soy sauce
    1/4 cup Worcestershire sauce 1 teaspoon garlic powder
    1 teaspoon salt
    1 teaspoon ground black pepper 1 (.75 ounce) packet dry brown gravy mix
    1 cup water
    In a large skillet heat oil over high heat. Saute the onion until almost translucent.
    Add the stew meat and cook on high heat until meat is browned on all sides; about 3 to 5 minutes.
    Pour 2 cups water, soy sauce, and Worcestershire sauce into the skillet. Stir in garlic powder, salt and pepper. Bring to a boil and reduce heat. Cover and simmer for 1 1/2 to 2 hours.
    Meanwhile combine the gravy mix with 1 cup water. Mix thoroughly and stir into the meat mixture. Bring to a boil stirring frequently until slightly thickened.

    Oven Beef Tips and Noodles

    1 pound sirloin tips, cubed
    1 (10.75 ounce) can condensed cream of mushroom soup
    1 (1.25 ounce) package beef with onion soup mix
    1 (4.5 ounce) can mushrooms, drained
    1 cup water
    1 (16 ounce) package wide egg noodles
    Preheat oven to 400 degrees F (200 degrees C).
    In a 13x9 inch casserole dish, combine the mushroom and beef onion soups, canned mushrooms and water. Mix thoroughly and add beef tips. Turn to coat well.
    Bake in a preheated oven for 1 hour.
    While beef tips are baking, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Serve beef tips and sauce over noodles.
    Healthier Beef Tips & Gravy
    1 cup all-purpose flour
    1 teaspoon seasoned salt
    1 teaspoon ground black pepper 1/2 teaspoon garlic powder
    1/2 teaspoon onion powder
    1 pound cubed beef stew meat 1/4 cup canola oil, divided
    1 large onion, coarsely chopped 3 cups beef broth
    1 (10.75 ounce) can fat free condensed cream of mushroom soup
    1 (10.75 ounce) can skim milk
    1 (8 ounce) can sliced mushrooms, drained
    2 tablespoons cornstarch (optional)
    1 tablespoon water (optional)
    In a large resealable plastic zipper bag, place flour, seasoned salt, black pepper, garlic powder, and onion powder. Stir the flour and seasonings together, and add the beef stew meat. Seal the bag and shake several times to coat the beef cubes with seasoned flour.
    Brush off excess flour.
    Heat half of the canola oil in a large skillet over medium-high heat. Fry half of the beef cubes, turning them over until all sides are nicely browned, 5 to 10 minutes. Remove the browned beef to a plate,
    and repeat with the rest of the canola oil and beef cubes. Transfer to plate, and cook and stir the onion in the hot skillet until translucent, about 5 minutes.
    Whisk together beef broth, mushroom soup, and skim milk until smooth. Return the beef cubes to the skillet together with any juices on the plate, add the mushrooms, and pour the broth mixture over the beef and mushrooms. Turn heat to low, and simmer until the meat is very tender, about 3 hours. For a thicker gravy, mix cornstarch and water to make a smooth paste, and stir into the gravy. Simmer about 2 minutes to thicken.
    Beef Tips in Alfredo Sauce

    2 tablespoons butter 1I2 cup chopped onion
    6 ounces fresh mushrooms, sliced 1I4 cup Marsala wine
    1 teaspoon garlic powder
    1 teaspoon Italian seasoning
    4 pounds lean beef stew meat 3 cups water
    1 (16 ounce) jar Alfredo-style pasta sauce
    1 (26 ounce) jar spaghetti sauce
    Melt 1 tablespoon of the butter or margarine in a large skillet over medium high heat. Saute onion and mushrooms until soft. Add a sprinkle of the wine, garlic powder and seasoning and stir all together. Remove mixture from skillet. Melt remaining tablespoon of butter or margarine in skillet. Add remaining wine, garlic powder and seasonings. Add beef and saute until browned, about 7 to 10 minutes.
    Add water to beef and let simmer over low heat until meat is tender. Drain off skillet liquid and reserve. Return onionImushroom mixture to skillet; stir in Alfredo sauce and spaghetti sauce. Return 1I4 to 1I2 cup of the reserved liquid to the skillet (do not add too much, as this will make the sauce too watery). Stir all together and serve.
